Slow Cooker Honey Garlic Glazed Roast

Ingredients
- 3 to 4 lbs boneless beef roast, such as chuck roast, round roast, or rump roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup honey
- 1/2 cup soy sauce
- 1/2 cup beef broth
- 4 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried thyme, or 3 to 4 fresh thyme sprigs
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water, optional
- Flaky sea salt, for garnish
Instructions
- Pat the beef roast dry with paper towels. Season it evenly on all sides with salt, black pepper, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the roast and sear for 3 to 4 minutes per side, until a deep golden-brown crust forms. Transfer the roast to the slow cooker.
- In a medium bowl, whisk together the honey, soy sauce, beef broth, minced garlic, balsamic vinegar, and thyme.
- Pour the honey garlic sauce evenly over the roast.
- Cover the slow cooker and cook on LOW for about 8 hours, or on HIGH for about 4 hours, until the beef is very tender and easily pulls apart with a fork.
- Carefully transfer the cooked roast to a serving platter and cover loosely with foil.
- For a thicker glaze, pour the cooking liquid into a saucepan and bring it to a gentle simmer.
- Stir together the cornstarch and cold water until completely smooth.
- Slowly whisk the cornstarch mixture into the simmering sauce. Cook for 2 to 3 minutes, stirring constantly, until the sauce thickens into a glossy glaze.
- Spoon the warm honey garlic glaze generously over the roast.
- Sprinkle lightly with flaky sea salt and garnish with fresh thyme if desired.
- Slice or shred the roast and serve warm with extra glaze on the side.
Tips
For the most tender result, chuck roast is usually an excellent choice because its marbling becomes soft during slow cooking.
Searing the beef before slow cooking adds deeper flavor and gives the roast a richer exterior.
Do not add the cornstarch directly to the slow cooker without first mixing it with cold water, or it may form lumps.
If the sauce tastes too salty, add a small amount of unsalted beef broth before thickening.
Serving Suggestions
Serve the roast with mashed potatoes, roasted vegetables, rice, buttered noodles, green beans, or crusty bread.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Keep some of the glaze with the meat to help it stay moist.
Reheat gently on the stovetop, in the microwave, or in a covered baking dish with a little extra sauce.
