Slow Cooker Balsamic Beef with Pearl Onions

Ingredients

  • 3 lb beef chuck roast, cut into large chunks
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 10–12 pearl onions, peeled
  • 5 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the beef chunks dry with paper towels. Season evenly with salt, black pepper, and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Working in batches, sear the beef for 2–3 minutes per side until a deep brown crust develops. Transfer the browned beef to the slow cooker.
  3. Arrange the peeled pearl onions around the beef.
  4. In a medium bowl, whisk together the minced garlic, beef broth, balsamic vinegar, Worcestershire sauce, soy sauce, brown sugar, tomato paste, thyme, and rosemary until well combined.
  5. Pour the balsamic mixture evenly over the beef and pearl onions.
  6. Cover and cook on Low for 7–8 hours or on High for 4–5 hours, until the beef is fork-tender and easily pulls apart.
  7. Carefully transfer the cooked beef and pearl onions to a serving platter and keep warm.
  8. In a small bowl, stir together the cornstarch and cold water until smooth.
  9. Pour the cornstarch slurry into the cooking liquid and stir well. Cover and cook on High for another 10–15 minutes, until the sauce becomes slightly thickened and glossy. For a richer sauce, you can transfer the liquid to a saucepan and simmer it for a few minutes instead.
  10. Spoon the thick balsamic sauce generously over the tender beef and pearl onions.
  11. Garnish with freshly chopped parsley and serve warm.

Tips

For the best flavor and a rich, dark-colored sauce, take the time to sear the beef well before adding it to the slow cooker.

Beef chuck roast is ideal for this recipe because the long, gentle cooking process makes it exceptionally tender and juicy.

If you prefer a thicker sauce, simmer the cooking liquid for a few extra minutes after adding the cornstarch slurry.

Taste the sauce before serving and adjust with a small pinch of salt or a splash of balsamic vinegar if needed.

Serve this balsamic beef with creamy mashed potatoes, buttery polenta, egg noodles, roasted vegetables, or warm crusty bread. The rich balsamic gravy pairs especially well with sides that can soak up the flavorful sauce.
