Roasted Lemon Herb Cauliflower with Feta

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes, optional
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 lemon, cut into wedges

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Rinse the cauliflower and dry it thoroughly. Cut it into evenly sized florets so they cook at the same rate.
  3. Add the cauliflower to a large mixing bowl. Drizzle with olive oil, then add the minced garlic, smoked paprika, garlic powder, oregano, salt, black pepper, and red pepper flakes if using.
  4. Toss well until all the cauliflower florets are evenly coated with the oil and seasonings.
  5. Arrange the cauliflower in a single layer on the prepared baking sheet, leaving a little space between each piece. This helps the cauliflower develop crispy, caramelized edges instead of steaming.
  6. Roast for 25–30 minutes, flipping the florets halfway through cooking. Continue roasting until the cauliflower is tender and golden brown with lightly charred edges.
  7. Remove the cauliflower from the oven and immediately drizzle it with fresh lemon juice.
  8. Transfer the roasted cauliflower to a serving platter. Sprinkle generously with crumbled feta cheese and fresh chopped parsley.
  9. Garnish with lemon wedges and serve warm.

Tips

Make sure the cauliflower is completely dry before seasoning it. Excess moisture can prevent the florets from becoming crispy.

For even more caramelization, roast the cauliflower for an additional 3–5 minutes or place it under the broiler for 1–2 minutes at the end.

You can also add grated Parmesan, fresh dill, toasted pine nuts, or a light drizzle of honey for extra flavor.

Avoid overcrowding the baking sheet. If necessary, use two baking sheets so the cauliflower has enough room to roast properly.
