Prep time:10 minutes
Cook time:25–30 minutes
Resting time:5–10 minutes
Servings: 4–6
IngredientsÂ
- 1½ lb pork tenderloin
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons ketchup or BBQ sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 teaspoon apple cider vinegar
- ½ teaspoon chili flakes, optional
InstructionsÂ
1.Preheat your oven to 400°F / 200°C. Remove the pork tenderloin from its packaging and pat it dry thoroughly with paper towels. Drying the surface helps the meat brown properly when seared.
2.Season the pork all over with salt, black pepper, and smoked paprika. Rub the seasoning gently into the meat so every side is evenly coated.
3.Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, carefully place the pork tenderloin into the skillet. Sear it for about 2–3 minutes on each side, turning as needed, until the outside develops a deep golden-brown crust. Searing adds flavor and helps give the pork an attractive caramelized appearance.
3.While the pork is searing, prepare the honey garlic glaze. In a small bowl, combine the honey, soy sauce, brown sugar, ketchup or BBQ sauce, minced garlic, apple cider vinegar, and chili flakes if using. Stir until the brown sugar is mostly dissolved and the sauce is smooth.
4.Brush or spoon a generous amount of the glaze over the seared pork tenderloin, making sure the top and sides are well coated.
5.Transfer the skillet directly to the preheated oven. Roast the pork for approximately 18–22 minutes. About halfway through cooking, carefully remove the skillet and brush the pork with another layer of glaze.
6.For a darker, stickier, caramelized finish, switch the oven to broil for the final 2–3 minutes. Watch the pork closely during this step because the honey and brown sugar can burn quickly under high heat.
7.The pork is ready when the thickest part reaches an internal temperature of 145°F / 63°C. Using a meat thermometer is the best way to keep pork tenderloin juicy rather than overcooked.
8.Remove the pork from the oven and transfer it to a cutting board. Let it rest for 5–10 minutes before slicing. Resting allows the juices to redistribute throughout the meat.
9.Slice the pork into thick medallions and arrange them on a serving platter. Spoon the warm sticky pan glaze over the slices before serving.
Tips for the best Pork TenderloinÂ
•Avoid overcooking the pork. Pork tenderloin is very lean, which means it can become dry if cooked too long. Removing it from the oven at 145°F / 63°C helps keep it tender and juicy.
•For an extra glossy finish, simmer any glaze that has not touched raw pork in a small saucepan for 2–3 minutes. Once slightly thickened, brush it over the sliced pork just before serving.
•If you prefer a smokier flavor, use BBQ sauce instead of ketchup. For a sweeter glaze, add an extra teaspoon of honey. If you enjoy heat, increase the chili flakes or add a small amount of hot sauce.
•Be careful with glaze that has been in contact with raw pork. It should never be served unless it has been thoroughly boiled first.
Serving servings
This sticky honey garlic pork pairs beautifully with creamy mashed potatoes, roasted baby potatoes, white rice, brown rice, or buttered noodles. For vegetables, try roasted broccoli, carrots, asparagus, green beans, or Brussels sprouts.
A fresh cucumber salad or crunchy cabbage slaw can also balance the sweetness of the glaze.
Storage
Allow leftover pork to cool completely before storing. Place it in an airtight container and refrigerate for up to 3–4 days.
To reheat, place the sliced pork in a skillet over low heat with a spoonful of leftover sauce or a splash of water. Cover and warm gently until heated through. Avoid overheating, as this can dry out the pork.
For longer storage, freeze the cooked pork in an airtight freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
