The photo shows a thick strawberry cheesecake bar with a crumb crust, strawberry sauce, fresh berries, and whipped cream. This recipe recreates that style.

Ingredients

For the crust

  • 2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons sugar

For the strawberry sauce

  • 2 cups chopped strawberries, fresh or frozen
  • ⅓ cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

For the cheesecake

  • 24 oz (680 g) cream cheese, softened
  • ¾ cup sugar
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs, at room temperature

For serving

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Fresh strawberries
  • Extra graham cracker crumbs, optional

Instructions

  1. Make the sauce. Add the strawberries, sugar, and lemon juice to a saucepan. Cook over medium heat for 8–10 minutes, stirring occasionally, until the berries soften. Stir in the cornstarch mixture and simmer for 1–2 minutes until the sauce thickens. Set aside to cool completely.
  2. Prepare the pan. Heat the oven to 325°F (165°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang on two sides so you can lift out the cheesecake.
  3. Bake the crust. Mix the graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan. Bake for 10 minutes, then let it cool while you make the filling.
  4. Make the filling. Beat the cream cheese and sugar on low speed until smooth. Mix in the sour cream and vanilla. Add the eggs one at a time, mixing just until each is incorporated. Scrape down the bowl as needed.
  5. Add the strawberry swirl. Pour the filling over the crust. Spoon about ⅓ cup of cooled strawberry sauce over the top and gently swirl it through the filling with a butter knife. Save the remaining sauce for serving.
  6. Bake. Bake for 40–50 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, open its door slightly, and leave the cheesecake inside for 30 minutes.
  7. Chill. Cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight. Lift it from the pan and cut into 9 bars.
  8. Finish and serve. Whip the heavy cream with the powdered sugar until soft peaks form. Top each bar with strawberry sauce, fresh strawberries, whipped cream, and a few cracker crumbs if desired.

Tips

  • Use room-temperature cream cheese and eggs for a smooth filling.
  • Let the strawberry sauce cool before adding it to the cheesecake.
  • For clean slices, use a sharp knife and wipe it between cuts.
  • Add the whipped cream just before serving.

Storage

Keep the cheesecake bars covered in the refrigerator for up to 4 days. Store whipped cream and fresh strawberry toppings separately. You can freeze the plain bars, tightly wrapped, for up to 2 months; thaw them overnight in the refrigerator.

Serving Ideas

Serve chilled with extra strawberry sauce spooned onto the plate. For a smaller dessert, cut the pan into 16 squares.

Nutrition Benefits

Strawberries provide vitamin C, while the cream cheese and sour cream contribute some calcium. This is a rich dessert, so nutrition will vary with the size of each bar and the amount of topping.

Questions & Answers

Can I use frozen strawberries?
Yes. Use them straight from frozen for the sauce and cook a few minutes longer if needed.

Can I make this a day ahead?
Yes. An overnight chill makes the bars easier to slice.

How do I know when the cheesecake is done?
The edges should look set, while the center should wobble slightly when you gently move the pan.
