Honey Garlic Herb Glazed Pork Loin Roast

- 3–4 lb boneless pork loin roast
- 2 tablespoons olive oil
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 garlic cloves, minced

- ¼ cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 2 tablespoons butter
- 1 tablespoon fresh thyme leaves, plus extra for garnish
InstructionsÂ
- Preheat the oven to 375°F (190°C). Remove the pork loin from its packaging and pat it completely dry with paper towels.
- Season all sides of the pork with salt, black pepper, garlic powder, smoked paprika, dried thyme, and rosemary. Gently press the seasonings into the meat.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin and sear for approximately 2–3 minutes per side, turning as needed, until the outside develops a rich golden-brown crust.
- Meanwhile, prepare the glaze. Add the minced garlic, honey, soy sauce, brown sugar, Dijon mustard, Worcestershire sauce, apple cider vinegar, butter, and fresh thyme to a small saucepan.
- Cook over medium-low heat for about 3–4 minutes, stirring frequently, until the butter has completely melted and the glaze is smooth, glossy, and slightly thickened.
- Brush about half of the warm honey-garlic glaze generously over the seared pork, coating the top and sides evenly.
- Transfer the oven-safe skillet directly to the preheated oven. If the skillet cannot go into the oven, transfer the pork to a lightly greased roasting pan or baking dish.
- Roast for approximately 45–60 minutes, brushing the pork with more glaze once or twice during cooking to build a sticky, flavorful coating.
- Check the internal temperature by inserting an instant-read thermometer into the thickest portion of the pork. Cook until the center reaches 145°F (63°C).
- For an extra sticky and caramelized finish, brush another thin layer of glaze over the roast and place it under the broiler for approximately 2–3 minutes. Watch closely because the honey can caramelize very quickly.
- Transfer the finished pork loin to a cutting board and loosely cover it with foil. Allow it to rest for 10–15 minutes before carving.
- Slice the pork into thick, juicy pieces and arrange them on a serving platter. Spoon the warm pan juices and reserved honey-garlic glaze over the slices.
- Finish with fresh thyme leaves and freshly cracked black pepper. Serve warm with your favorite side dishes.
Tips
Make sure the pork loin is thoroughly dry before seasoning. Removing excess surface moisture helps it develop a much better golden crust during searing.
Use a pork loin roast rather than pork tenderloin for this recipe. Pork loin is larger and thicker, making it ideal for roasting and cutting into substantial slices.
A meat thermometer is the easiest way to prevent dry pork. Check the thickest section rather than relying only on cooking time.
Let the roast rest for at least 10 minutes before slicing. This allows the juices to redistribute through the meat.
If you want additional glaze for serving, set some aside before it comes into contact with the raw or partially cooked pork. Warm the reserved portion separately before spooning it over the finished slices.
StorageÂ
Store leftover pork loin with some of the pan juices or sauce in an airtight container in the refrigerator for 3–4 days.
For longer storage, divide the pork into individual portions, place them in freezer-safe containers, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
To reheat, place the pork in a covered baking dish with a small splash of broth, pan juices, or reserved glaze. Warm at 300°F (150°C) until heated through. Gentle reheating will help keep the pork tender and juicy.
