Cook Time: 3–3½ hours
Resting Time: 10–15 minutes
Servings: 6–8

Tender chuck roast and buttery baby potatoes are slowly braised in a rich garlic-balsamic sauce. The cooking liquid is thickened into a glossy glaze that makes this an easy, comforting one-pot dinner.

Ingredients
Beef and Potatoes
3–4 pounds beef chuck roast
1½ pounds baby potatoes
2 tablespoons olive oil
1½ teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
5 garlic cloves, minced
1 cup beef broth
â…“ cup balsamic vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 tablespoon honey
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 tablespoons unsalted butter
2 tablespoons fresh parsley, chopped
Cornstarch Slurry
1 tablespoon cornstarch
2 tablespoons cold water
Instructions
Preheat the oven to 325°F (165°C).
Pat the chuck roast thoroughly dry with paper towels. Season every side with salt, black pepper, garlic powder, onion powder, and smoked paprika.
Heat the olive oil in a large Dutch oven over medium-high heat.
Add the seasoned roast and sear it for 3–4 minutes per side until it develops a deep brown crust. Brown the edges as well, then transfer the roast to a plate.
Reduce the heat to medium. Add the minced garlic and cook for approximately 30 seconds, stirring constantly.
Pour in the beef broth and scrape the browned pieces from the bottom of the pot with a wooden spoon.
Add the balsamic vinegar, Worcestershire sauce, brown sugar, honey, and tomato paste. Whisk until the tomato paste and sugar dissolve.
Stir in the dried thyme and rosemary.
Return the roast to the Dutch oven. Spoon some of the balsamic mixture over its surface.
Cover the Dutch oven tightly and transfer it to the preheated oven. Cook for approximately 2 hours.
Remove the pot carefully from the oven. Arrange the baby potatoes around the roast and turn them gently in the cooking juices.
Cover the pot again and continue cooking for 60–90 minutes. The roast is ready when it pulls apart easily with a fork and the potatoes are tender.
Chuck roast commonly becomes fall-apart tender around 195–205°F because its connective tissue needs time to soften. For basic food safety, USDA guidance states that whole beef roasts must reach at least 145°F followed by a minimum three-minute rest.
Transfer the beef and potatoes to a large serving dish. Tent the beef loosely with foil and let it rest for 10–15 minutes.
Place the Dutch oven containing the cooking liquid over medium heat and bring it to a gentle simmer.
Mix the cornstarch with the cold water until completely smooth.
Gradually whisk the slurry into the simmering cooking liquid. Cook for 2–3 minutes, stirring frequently, until the sauce becomes thick and glossy.
Remove the sauce from the heat and stir in the butter. Taste and adjust the salt or black pepper if needed.
Slice the beef against the grain or pull it into large tender pieces.
Spoon the garlic-balsamic glaze generously over the beef and potatoes. Finish with chopped fresh parsley and serve warm.
Tips
Chuck roast is the best choice for a tender, pull-apart texture.
Dry the beef well before searing so it develops a deeply browned crust.
Do not rush the cooking. If the roast remains tough, cover it and cook for another 20–30 minutes.
Add very small potatoes only during the final 45–60 minutes.
Use low-sodium beef broth to control the salt level.
For a less-sweet sauce, omit the honey or reduce the brown sugar.
If the sauce becomes too thick, whisk in a small amount of warm broth.
If the sauce remains thin, simmer it uncovered before adding the cornstarch mixture.
For a darker finish, brush the cooked roast with reduced sauce and broil it for 2–3 minutes. Watch it continuously to prevent burning.

Frequently Asked Questions

Can I make this in a slow cooker?
Yes. Sear the beef first, then transfer it and the sauce ingredients to a slow cooker. Cook for 7–8 hours on LOW or 4–5 hours on HIGH. Add the potatoes during the final 3–4 hours on LOW.

Why is my roast still tough?
It needs more time. Keep it covered and continue cooking until the connective tissue softens and the meat separates easily with a fork.

Can I add carrots?
Yes. Add thick carrot pieces when you add the baby potatoes.

Can I leave out the honey?
Yes. The brown sugar provides enough sweetness to balance the balsamic vinegar.

Should I peel the baby potatoes?
No. Wash them thoroughly and leave their thin skins intact so they hold their shape.

Can I prepare the roast one day ahead?
Yes. Refrigerate the cooked roast in its sauce. Remove any hardened excess fat and reheat it gently before serving.
