Strawberry Cream Cheese Icebox Cake

Ingredients
- 2 lb (900 g) fresh strawberries, washed and thoroughly dried
- 16 oz (450 g) full-fat cream cheese, softened
- 1 cup (120 g) powdered sugar
- 2 teaspoons vanilla extract
- 2 cups (480 ml) cold heavy whipping cream
- 18–24 full graham cracker sheets, enough for 3 layers in your dish
Instructions
- Prepare the strawberries.
Remove the stems and slice the strawberries approximately ¼ inch thick. Reserve a few for decorating before serving. Pat the sliced berries gently with paper towels to remove excess moisture. - Beat the cream cheese.
In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla, then beat until creamy, scraping down the sides of the bowl as needed. - Whip the cream.
In a separate chilled bowl, beat the cold heavy whipping cream until stiff peaks form. Stop when the cream holds its shape without becoming grainy. - Combine the filling.
Stir about one-quarter of the whipped cream into the cream cheese mixture to lighten it. Gently fold in the remaining whipped cream in two additions, keeping the filling light and fluffy. - Prepare the dish.
Spread a thin layer of filling across the bottom of a 9 × 13-inch baking dish. This helps hold the crackers in place. - Build the first layer.
Arrange graham crackers in a single layer, breaking them as needed to cover the bottom. Spread one-third of the remaining filling over the crackers, reaching the edges. Top with half the sliced strawberries. - Add the second layer.
Place another layer of graham crackers over the strawberries. Spread with another third of the filling, then add the remaining sliced strawberries. - Finish the cake.
Add a final layer of graham crackers and spread the remaining filling evenly over the top. Cover the crackers completely so they soften during chilling. - Refrigerate overnight.
Cover the dish without pressing the cover into the topping. Refrigerate for at least 8 hours, preferably 12 hours. The crackers will soften into tender, cake-like layers. - Decorate and serve.
Just before serving, decorate with the reserved strawberries. Add a few crushed graham cracker crumbs if desired. Cut into squares with a sharp knife, wiping it between slices, and lift out with a wide spatula.
Tips
- Use full-fat block cream cheese for a thick, stable filling.
- Let the cream cheese soften before mixing to prevent lumps, but keep the whipping cream cold.
- Choose ripe, firm strawberries. Very soft berries can release too much juice.
- Fresh strawberries work best; thawed frozen strawberries can make the layers watery.
- Spread the filling all the way to the edges so every cracker softens.
- Avoid shortening the chilling time, or the crackers may remain crunchy.
- If graham crackers are unavailable, use plain digestive biscuits or rectangular tea biscuits. The quantity and softening time may vary.
- For a brighter flavor, fold 1 teaspoon finely grated lemon zest into the cream cheese mixture.
Storage
Keep the cake covered in the refrigerator for up to 3 days. It has the best texture within the first 24–48 hours; after that, the strawberries release more moisture and the layers become softer.
Refrigerate promptly after serving. Freezing is not recommended for the best texture because fresh strawberries can become watery when thawed.
