Slow Cooker Balsamic Roast Beef

🛒 Ingredients

  • 3–4 lbs boneless beef chuck roast or beef brisket
  • 1 large yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • ½ cup balsamic vinegar
  • ½ cup beef broth
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • ½ tsp dried thyme
  • 1 dried bay leaf
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

👩‍🍳 Instructions

  1. Sear the beef: Season the roast generously with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the beef for 3–4 minutes per side, until deeply browned. Transfer to the slow cooker.
  2. Make the sauce: Whisk together balsamic vinegar, beef broth, soy sauce, brown sugar, Worcestershire sauce, garlic, and thyme.
  3. Layer: Place sliced onions over the beef. Pour the balsamic mixture over everything and add the bay leaf.
  4. Slow cook: Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is tender and easily pulls apart with a fork.
  5. Serve: Remove the bay leaf. Shred or slice the beef and spoon the balsamic onions and flavorful juices over the top.

💡 Tip

For the richest flavor, don’t skip searing the roast before adding it to the slow cooker.
