Slow Cooker Balsamic Glazed Beef Roast

Ingredients

Instructions
Step 1: Pat the roast dry with paper towels. Season it with the salt and black pepper.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side, until deeply browned. Transfer it to the slow cooker.
Step 3: Place the sliced onions and minced garlic around the beef. In a bowl, whisk together the beef broth, balsamic vinegar, brown sugar, soy sauce, tomato paste, and thyme. Pour the mixture over and around the roast.
Step 4: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender. The exact time depends on the size and thickness of the roast.
Step 5: Carefully transfer the beef to a platter and let it rest for 10 minutes. Spoon off excess fat from the cooking liquid if needed.
Step 6: For a thicker glaze, whisk the cornstarch and cold water together. Stir the mixture into the hot sauce in the slow cooker. Cover and cook on HIGH for 15–20 minutes, until the sauce thickens. Alternatively, simmer the sauce in a saucepan for a few minutes.
Step 7: Slice or gently pull apart the beef. Spoon the onions and plenty of balsamic gravy over the top before serving.
