Homemade Chocolate Caramel Toffee

This homemade chocolate caramel toffee is buttery, rich, and wonderfully crisp with a smooth chocolate topping. It looks impressive, but the recipe is surprisingly simple and uses basic pantry ingredients.

Ingredients

  • 1 cup (225 g) unsalted butter
  • 1 cup (200 g) granulated sugar
  • ¼ teaspoon salt
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1½ cups milk chocolate chips or semisweet chocolate chips
  • ½ cup finely chopped almonds, pecans, or peanuts, optional
  • Flaky sea salt, optional, for topping

Instructions

  1. Line a 9 x 13-inch baking pan or a large baking sheet with parchment paper. Lightly grease the parchment with butter or nonstick spray.
  2. Add the butter, sugar, salt, and water to a heavy-bottomed saucepan.
  3. Place the pan over medium heat and stir gently until the butter melts and the sugar begins to dissolve.
  4. Once the mixture starts bubbling, continue cooking while stirring frequently with a wooden spoon or heat-resistant spatula.
  5. Cook until the mixture turns a deep golden caramel color. If using a candy thermometer, cook until it reaches about 300°F (149°C), which is the hard-crack stage.
  6. Remove the saucepan from the heat immediately and carefully stir in the vanilla extract.
  7. Pour the hot toffee mixture onto the prepared pan. Quickly spread it into an even layer using a spatula. Work carefully because the mixture will be extremely hot.
  8. Let the toffee sit for about 2–3 minutes, then sprinkle the chocolate chips evenly over the top.
  9. Allow the chocolate chips to sit for another 2–3 minutes so the heat from the toffee melts them.
  10. Use an offset spatula or the back of a spoon to spread the melted chocolate into a smooth, even layer.
  11. If using nuts, sprinkle the chopped nuts over the melted chocolate while it is still soft. Add a light sprinkle of flaky sea salt if desired.
  12. Leave the pan at room temperature until partially cooled, then place it in the refrigerator for about 1 hour, or until completely firm.
  13. Once set, lift the toffee out of the pan using the parchment paper.
  14. Break or cut it into irregular pieces.

Tips for Perfect Toffee

Use a heavy-bottomed saucepan because thin pans can create hot spots and cause the sugar to burn.

Keep the heat around medium. Cooking the sugar too quickly can cause the outside to burn before the center reaches the correct temperature.

A candy thermometer gives the most reliable result. The mixture should reach approximately 300°F before being removed from the heat.

Do not walk away while the toffee cooks. The color can change from golden to burnt very quickly near the end.

If the butter appears to separate from the sugar, reduce the heat slightly and continue stirring gently until the mixture comes back together.

For cleaner slices like the pieces in the photo, let the candy firm completely and cut it with a large sharp knife. For a rustic appearance, simply break it by hand.

Variations

For dark chocolate toffee, use dark or bittersweet chocolate chips instead of milk chocolate.

For salted caramel toffee, sprinkle flaky sea salt over the chocolate before it sets.

For nutty toffee, add toasted pecans, almonds, walnuts, or peanuts on top.

For extra crunch, sprinkle crushed pretzels or finely crushed cookies over the chocolate.

You can also drizzle melted white chocolate over the finished candy once the first chocolate layer has set.

Storage

Store the toffee in an airtight container at room temperature for about 1 week.

For longer storage, refrigerate it for up to 2–3 weeks. Place parchment paper between the layers to prevent the pieces from sticking together.

It can also be frozen for up to 2 months. Let it come to room temperature for a few minutes before serving.
