Creamy Carrot & Herb Sandwich Spread

This creamy carrot and herb spread is rich, fresh, slightly tangy, and perfect for toast, crackers, sandwiches, wraps, or party appetizers. It comes together in about 10 minutes and tastes even better after a short rest in the refrigerator.
Ingredients
- 8 oz (225 g) cream cheese, softened
- ½ cup mayonnaise
- 1 medium carrot, finely grated
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 2 green onions, finely sliced
- 1 small garlic clove, finely minced
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1–2 tablespoons milk or sour cream, if needed for a softer consistency
Instructions
- Prepare the carrot: Peel the carrot and grate it very finely. If the grated carrot releases a lot of moisture, gently squeeze it with a paper towel. This keeps the spread thick and creamy instead of watery.
- Make the creamy base: Add the softened cream cheese to a medium mixing bowl. Beat it with a spoon, whisk, or hand mixer for about 1 minute until smooth.
- Add the mayonnaise and Dijon mustard. Mix again until completely combined and creamy.
- Add the vegetables and herbs: Stir in the grated carrot, parsley, dill, green onion, and minced garlic.
- Add lemon juice, garlic powder, onion powder, paprika, salt, and black pepper.
- Mix thoroughly until the carrot and herbs are evenly distributed throughout the creamy mixture.
- Check the consistency. If you want a softer, more spreadable texture, mix in 1 tablespoon of milk or sour cream at a time until it reaches your preferred consistency.
- Taste and adjust the seasoning. Add a little more salt, pepper, lemon juice, or dill if desired.
- You can serve it immediately, but for the best flavor, cover the bowl and refrigerate for 20–30 minutes. This gives the garlic, herbs, and seasonings time to blend.
- Spread generously over fresh white bread, toasted bread, crackers, bagels, or crostini.
Serving Ideas
This spread works especially well for party appetizers. Spoon it into a serving bowl and surround it with crackers, cucumber slices, celery sticks, carrots, or toasted baguette slices.
For sandwiches, spread a thick layer between two slices of soft white or whole-wheat bread. You can also add cucumber slices, lettuce, or thin tomato slices.
It is also delicious as a filling for tortilla wraps or as a topping for baked potatoes.
Tips
Make sure the cream cheese is fully softened before mixing so the spread stays smooth without lumps.
Finely grate the carrot rather than using thick shreds. Smaller pieces blend better into the cream cheese and make the spread easier to spread on bread.
Fresh herbs give the best flavor, but dried herbs can be used if necessary. Use about 1 teaspoon dried dill and 1 teaspoon dried parsley in place of fresh herbs.
For a stronger savory flavor, add ¼ cup finely shredded cheddar cheese.
For a slightly spicy version, mix in a pinch of cayenne pepper or crushed red pepper flakes.
For extra freshness, add another teaspoon of lemon juice just before serving.
Storage
Transfer the spread to an airtight container and refrigerate for up to 3–4 days.
Stir it well before serving because a small amount of moisture may separate during storage.
Freezing is not recommended because cream cheese and mayonnaise can become grainy after thawing.
