Ingredients

For the Beef Roast

  • 3–4 lb beef chuck roast
  • 2 tablespoons olive oil
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 cup beef broth

For the Sticky Honey Garlic Glaze

  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 4 garlic cloves, finely minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard
  • ½ teaspoon red pepper flakes (optional)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 325°F (165°C). Lightly prepare a deep roasting pan or oven-safe baking dish large enough to accommodate the beef.

Step 2: Season the Beef

Pat the beef roast dry using paper towels. In a small bowl, mix the salt, black pepper, smoked paprika, garlic powder, onion powder, thyme, and rosemary.

Rub the seasoning mixture evenly over the beef, making sure every side is well coated.

Step 3: Sear Until Golden Brown

Heat olive oil in a large skillet over medium-high heat.

Add the seasoned roast and sear for approximately 3–4 minutes per side until a deep golden-brown crust forms.

This process locks in delicious roasted flavors and adds richness to the finished dish.

Step 4: Make the Honey Garlic Glaze

In a small saucepan, combine honey, soy sauce, brown sugar, minced garlic, Worcestershire sauce, balsamic vinegar, butter, Dijon mustard, and red pepper flakes if using.

Warm over medium-low heat for 4–5 minutes, stirring continuously until the sugar dissolves and the mixture becomes smooth, glossy, and slightly thickened.

Step 5: Prepare the Roast

Transfer the seared beef to your prepared roasting pan.

Pour the beef broth around the meat to create a moist roasting environment.

Brush half of the prepared honey garlic glaze generously over the roast. Set aside the remaining glaze in a clean container for the final coating.

Step 6: Slow Roast Until Tender

Cover the roasting pan tightly with aluminum foil to retain moisture.

Place the roast in the preheated oven and cook for approximately 2½–3 hours.

Check the beef for tenderness. A chuck roast may require 3–4 hours or longer, depending on its thickness. Continue roasting until it is fork-tender, typically reaching an internal temperature of approximately 195–205°F (90–96°C).

Step 7: Caramelize the Honey Garlic Glaze

Carefully remove the aluminum foil and brush the beef with the reserved glaze.

Increase the oven temperature to 425°F (220°C).

Return the roast to the oven uncovered for another 10–15 minutes, until the glaze develops a thick, shiny, caramelized coating.

Watch carefully during this stage because honey and brown sugar can burn quickly.

Step 8: Allow the Beef to Rest

Remove the roasted beef from the oven and transfer it to a cutting board.

Cover loosely with aluminum foil and let it rest for 15 minutes. Resting helps the meat retain its juices before serving.

Step 9: Slice and Serve

Slice the beef against the grain or gently pull it apart into tender portions.

Drizzle the warm pan juices and extra honey garlic sauce over the meat for an irresistible finishing touch.

Serve with mashed potatoes, roasted carrots, steamed green beans, buttery rice, or your favorite vegetables.

Tips

  • Choose chuck roast: Its natural marbling makes it especially tender and flavorful when slow-roasted.
  • Do not skip searing: Browning the beef adds a deeper, richer flavor.
  • Keep the roast covered: Foil helps prevent excessive moisture loss during slow cooking.
  • Adjust the sweetness: Reduce the brown sugar slightly if you prefer a less sweet glaze.
  • Watch the final glaze: Honey caramelizes quickly, so monitor the beef closely during the final roasting stage.
  • Check tenderness: If the roast still feels tough, continue covered roasting until it becomes fork-tender.
  • Save the pan juices: They make a delicious sauce for serving.

Nutritional Benefits
