Slow Cooker Balsamic Garlic Beef Roast

Ingredients 

  • 3–4 lb beef chuck roast
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • ¼ cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon smoked paprika
  • 1 small carrot, finely diced, optional
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions 

Step 1: Pat the beef chuck roast dry using paper towels. Season it evenly on all sides with salt, black pepper, garlic powder, and onion powder.

Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the roast and sear it for approximately 3–4 minutes on each side, until a deep golden-brown crust develops. Transfer the browned roast to the slow cooker.

Step 3: Scatter the chopped onion and minced garlic around the beef. If using the carrot, add it around the roast as well.

Step 4: In a medium bowl, whisk together the beef broth, balsamic vinegar, brown sugar, Worcestershire sauce, tomato paste, dried thyme, dried rosemary, and smoked paprika until well combined.

Step 5: Pour the prepared balsamic garlic mixture evenly over the roast. Spoon some of the sauce over the top so the beef is nicely coated.

Step 6: Cover the slow cooker and cook on LOW for 8–9 hours or on HIGH for 5–6 hours. The roast is ready when it is extremely tender and can easily be pulled apart with a fork.

Step 7: Carefully remove the cooked roast from the slow cooker and place it on a serving platter. Cover loosely to keep it warm while preparing the sauce.

Step 8: To thicken the sauce, combine the cornstarch and cold water in a small bowl, stirring until completely smooth. Pour the slurry into the liquid remaining in the slow cooker and stir well. Cover and cook on HIGH for another 10–15 minutes, or until the sauce becomes thick and glossy.

Step 9: Return the tender beef to the slow cooker or pour the finished balsamic garlic sauce generously over the roast before serving.

Tips

For the juiciest and most tender result, beef chuck roast is an excellent choice because its marbling slowly breaks down during cooking, creating soft, flavorful meat.

Searing the roast before placing it in the slow cooker is highly recommended. This extra step creates a beautifully browned exterior and adds deeper, richer flavor to the finished dish.

If you enjoy a sweeter balsamic glaze, add an additional tablespoon of brown sugar or a little honey to the sauce mixture.

For a stronger and brighter balsamic taste, stir an extra 1–2 tablespoons of balsamic vinegar into the finished sauce shortly before serving.

Avoid opening the slow cooker frequently while the roast is cooking because releasing the heat can increase the total cooking time.

Storage 

Allow any leftovers to cool before transferring the beef and sauce to an airtight container. Store in the refrigerator for up to 4 days.

For reheating, warm the beef slowly with some of the balsamic sauce to prevent it from drying out.

The cooked roast can also be frozen with its sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving Ideas

Serve this Slow Cooker Balsamic Garlic Beef Roast with creamy mashed potatoes, roasted baby potatoes, buttered green beans, roasted carrots, steamed vegetables, or warm dinner rolls.

The rich balsamic garlic sauce is especially delicious spooned generously over mashed potatoes or vegetables. You can also shred the tender beef and serve it in sandwiches, over rice, or alongside a simple fresh salad for an easy second meal.
