Creamy Herb & Carrot Sandwich Spread

Ingredients
- 8 oz (225 g) cream cheese, softened
- ½ cup mayonnaise
- ½ cup finely shredded carrot
- ¼ cup fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 2 green onions, finely chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh lemon juice
Instructions
- Place the softened cream cheese and mayonnaise in a medium mixing bowl. Stir or beat until completely smooth and creamy.
- Add the finely shredded carrot, chopped parsley, fresh dill, and green onions. Stir gently until evenly combined.
- Add the Dijon mustard, garlic powder, onion powder, salt, black pepper, and fresh lemon juice.
- Mix everything thoroughly until the carrots, herbs, and seasonings are evenly distributed throughout the creamy mixture.
- Taste the spread and adjust the seasoning if necessary. Add a little extra lemon juice for brightness or additional salt and pepper to suit your preference.
- Cover the bowl and refrigerate for approximately 30 minutes. Chilling allows the herbs and seasonings to blend into the creamy base and helps the spread become slightly firmer.
- Spread generously over fresh white bread, whole-wheat bread, or lightly toasted bread. Serve as sandwiches, or use the mixture as a filling for wraps, a topping for crackers, or a creamy dip for fresh vegetables.
Tips
Finely grate the carrot so it blends smoothly into the cream cheese mixture. After shredding, gently pat the carrot with paper towels to remove excess moisture and prevent the spread from becoming watery.
For the smoothest texture, allow the cream cheese to soften completely at room temperature before mixing.
For a lighter version, substitute half of the mayonnaise with plain Greek yogurt. You can also add a little extra fresh dill or parsley if you prefer a stronger herb flavor.
For tea sandwiches, chill the spread before assembling the sandwiches. This makes it easier to spread evenly and helps the sandwiches hold their shape.
Storage
Transfer the leftover spread to an airtight container and refrigerate for up to 3–4 days. Stir briefly before serving again, as a small amount of moisture may naturally separate during storage.
Freezing is not recommended because cream cheese, mayonnaise, and fresh vegetables can separate and develop a watery or grainy texture after thawing.
