Prep Time: 10 minutes
Chill Time: 10 minutes
Servings: 1 large bowl
Ingredients
Crunchy Base
- 2 tablespoons almond flour
- 1 tablespoon finely chopped pecans
- 1 teaspoon melted butter
- ½ teaspoon low-carb sweetener
- Pinch of sea salt
Cheesecake Filling
- ¾ cup plain nonfat Greek yogurt
- ¼ cup low-fat cottage cheese
- 1 ounce reduced-fat cream cheese, softened
- ½ scoop vanilla protein powder
- 1 tablespoon sugar-free caramel sauce
- ½ teaspoon vanilla extract
- Pinch of sea salt
Topping
- 1 tablespoon sugar-free caramel sauce
- 1 tablespoon chopped pecans or crushed protein cereal
- A few small pieces of sugar-free caramel candy, optional
- Flaky sea salt
Instructions
- Combine the almond flour, chopped pecans, melted butter, sweetener, and salt in a small bowl. Press the mixture firmly into the bottom of a serving bowl or food-storage container.
- Add the Greek yogurt, cottage cheese, cream cheese, protein powder, caramel sauce, vanilla, and salt to a blender or food processor.
- Blend until completely smooth, thick, and creamy. If the filling is too thick, add one teaspoon of milk. If it is too thin, mix in a little more protein powder.
- Spoon the cheesecake mixture over the crunchy base and spread it evenly.
- Drizzle the remaining caramel sauce over the filling. Swirl it gently using the tip of a spoon.
- Finish with chopped pecans, optional sugar-free caramel pieces, and a small pinch of flaky sea salt.
- Refrigerate for at least 10 minutes before enjoying. For a firmer cheesecake texture, chill it for 30–60 minutes.
Tips
- Blend the cottage cheese thoroughly so the filling becomes silky and lump-free.
- Choose a thick Greek yogurt to prevent a runny cheesecake layer.
- Adjust the sweetener according to the sweetness of your protein powder.
- For additional crunch, sprinkle the topping on immediately before serving.
Storage
Cover and refrigerate for up to 2 days. Store the crunchy topping separately to keep it crisp.
