Creamy Cucumber and Dill Sandwiches

Ingredients
- 8 slices soft white sandwich bread
- 1 large English cucumber, thinly sliced
- 6 oz (170 g) cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon fresh lemon juice
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- Salt, to taste
Instructions
- Prepare the cucumber.
Wash and dry the cucumber. Cut it into thin, even rounds using a sharp knife or mandoline. Leave the skin on for color and crunch. Spread the slices over paper towels and pat thoroughly dry to prevent soggy sandwiches. - Make the creamy filling.
In a medium bowl, combine the softened cream cheese, mayonnaise, dill, lemon juice, garlic powder, and black pepper. Stir until smooth and spreadable. Taste and add a small pinch of salt if needed. - Prepare the bread.
Arrange the bread slices on a clean cutting board. Use fresh, soft bread for the tender texture shown in the picture. - Spread the filling.
Divide the cream cheese mixture evenly among all eight bread slices, spreading it almost to the edges. Coating both inside surfaces helps protect the bread from cucumber moisture. - Layer the cucumber.
Arrange overlapping cucumber slices over four of the bread slices. Add a second thin layer if desired, distributing the cucumber evenly so each bite contains some. - Assemble the sandwiches.
Place the remaining bread slices on top, cream cheese side facing inward. Press gently to hold everything together without flattening the bread or squeezing out the filling. - Trim and slice.
Use a sharp serrated knife to carefully remove the crusts. Cut each sandwich diagonally into two triangles. For smaller party sandwiches, cut each into four triangles instead. - Arrange and serve.
Place the sandwiches on a serving plate with the cut edges showing the cucumber and creamy dill filling. Serve immediately, or cover and refrigerate briefly until needed.
Tips
- English cucumbers work especially well because they have thin skins and small seeds.
- If using a cucumber with a watery seed center, remove the seeds before slicing.
- Soften the cream cheese just enough to spread easily without tearing the bread.
- Dry the cucumber slices thoroughly; this is the most useful step for keeping the sandwiches fresh.
- Use 1 teaspoon dried dill if fresh dill is unavailable.
- Add finely chopped chives or a little lemon zest for extra flavor.
- Keep the crusts for homemade breadcrumbs or croutons.
- For the neatest cuts, refrigerate the assembled sandwiches for 15 minutes before trimming.
Storage
These sandwiches taste best freshly made. Store leftovers in an airtight container in the refrigerator for up to 24 hours. The cucumber will gradually release moisture and soften the bread.
For advance preparation, make the cream cheese spread up to 2 days ahead and refrigerate separately. Slice and dry the cucumber shortly before assembling.
Freezing is not recommended because cucumber becomes watery after thawing.
