Ingredients
- 2 large sweet potatoes, about 600 g, peeled and cut into 1-inch cubes
- 3 tbsp butter, melted
- 2 tbsp packed brown sugar
- 1 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Place the sweet potato cubes in a large mixing bowl.
- In a small bowl, combine the melted butter, brown sugar, maple syrup, cinnamon, salt, and vanilla.
- Pour the mixture over the sweet potatoes and toss until every piece is evenly coated.
- Spread the sweet potatoes on the prepared baking sheet in a single layer. Leave a little space between the pieces so they roast instead of steam.
- Roast for 25–30 minutes, stirring or flipping once halfway through.
- When the potatoes are tender inside and browned around the edges, switch the oven to broil.
- Broil for about 1–2 minutes for extra caramelized edges. Watch closely because the sugar can burn quickly.
- Remove from the oven and let them rest for 2–3 minutes before serving.
Tips
Cut the sweet potatoes into similar-size cubes so they cook evenly.
Do not overcrowd the baking sheet.
For extra crunch, add 1/4 cup chopped pecans during the last 5 minutes of roasting.
A tiny splash of vanilla gives the sweet potatoes a warm dessert-like flavor without making them overly sweet.
For a more savory version, reduce the brown sugar and add smoked paprika or rosemary.
