These Slow Cooker Balsamic Beef Short Ribs are deeply savoury, rich, and fall-apart tender. - 3 to 4 pounds of beef short ribs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 large onion, chopped
- 5 garlic cloves, minced
- 3/4 cup beef broth
- 1/2 cup balsamic vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons brown sugar or honey
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 2 tablespoons cornflour
- 2 tablespoons cold water
- 2 green onions, sliced, for garnish
- Fresh parsley, chopped, for garnish
Instructions
- Pat the beef short ribs dry with paper towels and season them generously with salt, black pepper, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the short ribs in batches and sear for about 2 to 3 minutes per side until a deep brown crust develops.
- Transfer the browned ribs to the slow cooker.
- Add the chopped onion and minced garlic around the beef.
- In a medium bowl, whisk together the beef broth, balsamic vinegar, Worcestershire sauce, brown sugar or honey, tomato paste, thyme, and rosemary.
- Pour the sauce evenly over the short ribs.
- Add the bay leaves to the slow cooker.
- Cover and cook on LOW for 7 to 8 hours, or until the beef is extremely tender and easily pulls apart with a fork.
- Carefully transfer the cooked ribs to a serving platter.
- Skim excess fat from the surface of the cooking liquid if desired.
- Pour the cooking liquid into a saucepan and bring it to a gentle simmer.
- Mix the cornflour and cold water in a small bowl until smooth.
- Slowly whisk the cornflour mixture into the simmering sauce.
- Cook for 2 to 3 minutes, stirring frequently, until the sauce becomes thick and glossy.
- Spoon the balsamic sauce generously over the tender short ribs.
- Garnish with sliced green onions and fresh parsley.

Searing the short ribs before slow cooking creates a richer flavour and darker sauce.
