Prep Time: 15 minutes
Cook Time: 30–35 minutes
Servings: 6

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • ½ cup heavy cream
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ cup breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a medium baking dish.
  2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 4–5 minutes, just until slightly tender. Do not overcook.
  3. Drain the cauliflower very well and let it sit for a few minutes so excess moisture can escape.
  4. In a saucepan, melt 2 tablespoons butter over medium heat. Add the minced garlic and cook for about 30 seconds.
  5. Stir in the flour and cook for about 1 minute, whisking constantly.
  6. Slowly pour in the milk and heavy cream while whisking. Continue cooking for 3–4 minutes until the sauce starts to thicken.
  7. Reduce the heat to low and add 1 cup cheddar cheese and ¼ cup Parmesan cheese. Stir until smooth and creamy.
  8. Season the cheese sauce with salt, black pepper, paprika, and onion powder.
  9. Arrange the drained cauliflower evenly in the prepared baking dish.
  10. Pour the creamy cheese sauce over the cauliflower, making sure the florets are well coated.
  11. Sprinkle the remaining ½ cup cheddar cheese and ¼ cup Parmesan over the top.
  12. In a small bowl, combine the breadcrumbs with 2 tablespoons melted butter.
  13. Sprinkle the buttery breadcrumbs evenly over the cheese.
  14. Bake uncovered for 20–25 minutes, until hot and bubbling around the edges.
  15. For a deeper golden crust like the one in the photo, broil for 1–3 minutes at the end. Watch carefully so the topping does not burn.
  16. Remove from the oven and allow it to rest for 5 minutes.
  17. Garnish with chopped fresh parsley and serve warm.

Tips

Dry the cauliflower thoroughly after boiling. Too much water can make the cheese sauce thin.

For an extra-creamy casserole, increase the heavy cream to ¾ cup.

Freshly shredded cheese melts more smoothly than pre-shredded cheese.

For an even crispier topping, mix a little Parmesan into the breadcrumbs.

You can also add cooked bacon, shredded chicken, or diced ham if you want to turn this into a heartier main dish.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave, or warm the casserole in a 350°F (175°C) oven until heated through.

Freezing is possible, but the creamy sauce may become slightly grainy after thawing.

This recipe is also a good way to turn simple cauliflower into a rich, comforting side dish that works well for family dinners, holidays, and potlucks.

Q&A

Can I use frozen cauliflower?
Yes. Thaw it first and drain it extremely well before assembling the casserole.

Can I make this ahead of time?
Yes. Assemble the casserole, cover it, and refrigerate for up to 24 hours. Add the breadcrumb topping just before baking.

What cheese works best?
Sharp cheddar gives the strongest flavor, but Gruyère, Monterey Jack, mozzarella, or a combination also works.

Why is my cauliflower gratin watery?
The most common reason is excess moisture in the cauliflower. Drain it thoroughly and avoid overcooking it before baking.

Can I skip the breadcrumbs?
Absolutely. Simply top the casserole with extra cheese for a completely cheesy crust.

What should I serve with it?
It pairs especially well with roasted chicken, steak, baked salmon, pork chops, or a fresh green salad.
