Mediterranean Chickpea-Stuffed Sweet PotatoesÂ

IngredientsÂ
- 2 large sweet potatoes, halved lengthwise
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- ÂĽ red onion, finely chopped
- ½ cup crumbled feta cheese
- 2 tablespoons olive oil, divided
- 1 tablespoon fresh lemon juice
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- Lemon wedges, for serving
InstructionsÂ
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the sweet potatoes, then cut them in half lengthwise. Brush the cut sides with about 1 tablespoon olive oil and season lightly with salt and black pepper.
- Place the sweet potatoes cut-side down on the prepared baking sheet. Roast for 40–50 minutes, or until the centers are very soft and the edges are lightly caramelized.
- Meanwhile, pat the chickpeas dry with paper towels. Place them in a bowl and toss with the remaining olive oil, smoked paprika, garlic powder, cumin, oregano, salt, and black pepper.
- Spread the chickpeas on a separate baking sheet and roast for 15–20 minutes, stirring halfway through, until warmed through and slightly crisp around the edges.
- In a medium bowl, combine the cherry tomatoes, cucumber, red onion, half of the feta cheese, parsley, and lemon juice. Toss gently until evenly mixed.
- When the sweet potatoes are tender, remove them from the oven and let them cool for a few minutes. Use a fork to gently fluff the flesh without breaking the skins.
- Spoon the roasted chickpeas generously over each sweet potato half.
- Top with the fresh cucumber and tomato mixture, then sprinkle the remaining feta over the top.
- Finish with extra parsley, a little black pepper or oregano, and a light drizzle of olive oil if desired.
- Serve warm with fresh lemon wedges on the side.
Tips
For extra creaminess, add a spoonful of tzatziki, hummus, or garlic yogurt sauce before serving.
Make sure to dry the chickpeas thoroughly before roasting. This helps them become more flavorful and slightly crisp.
Keep the sweet potato skins intact so they hold the filling well and develop a delicious caramelized texture in the oven.
For even more Mediterranean flavor, add Kalamata olives, roasted red peppers, or chopped fresh mint.
