Prep Time: 15 minutes Cook Time: 6–8 hours on LOW or 4–5 hours on HIGH Servings: 6–8 servings

Ingredients

  • 3–4 lb boneless pork roast
  • 3 tbsp olive oil
  • 5 garlic cloves, minced
  • 1 cup chicken broth
  • 2 tbsp butter, melted
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce

Instructions

1. Prepare the Pork

Pat the pork roast dry with paper towels. This helps the seasonings stick to the meat and gives it better flavor.

2. Make the Garlic Herb Mixture

In a small bowl, combine olive oil, minced garlic, melted butter, rosemary, thyme, paprika, onion powder, salt, and black pepper. Mix well until a thick, fragrant seasoning mixture forms.

3. Season the Roast

Rub the garlic herb mixture all over the pork roast. Make sure every side is evenly coated so the meat absorbs the delicious flavors while cooking.

4. Prepare the Slow Cooker

Pour the chicken broth and Worcestershire sauce into the bottom of your slow cooker. Stir gently to combine.

5. Cook the Pork

Place the seasoned pork roast into the slow cooker. Cover with the lid and cook on LOW for 6–8 hours or HIGH for 4–5 hours, adjusting as needed for the size and cut of the roast.

6. Check for Doneness

Use a meat thermometer to check the thickest part of the roast. Whole pork roasts should reach at least 145°F (63°C), followed by a 3-minute rest. For a fall-apart tender texture, continue cooking as needed until the meat is tender.

7. Rest and Serve

Remove the pork from the slow cooker and let it rest for 10 minutes before slicing. Spoon the flavorful garlic herb cooking juices over the meat before serving.

Tips for the Best Roast Pork

  • Extra flavor: Sear the pork in a hot pan for 2–3 minutes per side before placing it in the slow cooker.
  • Keep it juicy: Avoid lifting the lid frequently, as this releases heat and increases cooking time.
  • Make a thicker gravy: Strain the cooking juices and simmer them with a cornstarch slurry until thickened.
  • Serving ideas: Serve with creamy mashed potatoes, roasted vegetables, green beans, or a fresh garden salad.
