Slow Cooker Beef Pot Roast with Potatoes, Carrots & Rich Gravy
Prep Time: 15 minutes Cook Time: 8–9 hours on LOW or 4–5 hours on HIGH Servings: 6
Ingredients
- 3 lbs beef chuck roast
- 4 medium potatoes, cut into large chunks
- 4 large carrots, cut into thick pieces
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons cornstarch (optional, for thickening gravy)
- 2 tablespoons cold water (if using cornstarch)
Instructions
Step 1: Season the Beef
Pat the beef chuck roast dry with paper towels. Rub it evenly with salt, black pepper, and dried thyme.
Step 2: Sear the Roast
Heat olive oil in a large skillet over medium-high heat. Sear the beef for 3–4 minutes on each side until beautifully browned. This creates a rich, savory flavor.
Step 3: Prepare the Vegetables
Place the potatoes, carrots, sliced onion, and minced garlic in the bottom of a slow cooker. Spread everything evenly.
Step 4: Add the Beef
Place the seared beef roast on top of the vegetables.
Step 5: Add the Broth
Pour the beef broth and Worcestershire sauce into the slow cooker around the roast. Cover with the lid.
Step 6: Slow Cook Until Tender
Cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender and the vegetables are soft. Cooking times may vary depending on the slow cooker and thickness of the roast.
Step 7: Make the Rich Gravy
Carefully transfer the cooked beef and vegetables to a serving platter.
Pour the cooking liquid into a saucepan. For thicker gravy, mix 2 tablespoons cornstarch with 2 tablespoons cold water until smooth.
Stir the mixture into the simmering cooking liquid and cook for 2–3 minutes until thickened.
Step 8: Serve and Enjoy
Slice or shred the tender beef and arrange it alongside the potatoes, carrots, and onions. Spoon the rich, savory gravy generously over everything.
Tips
- Choose chuck roast: Its marbling and connective tissue make it ideal for tender, juicy slow-cooked beef.
- Don’t skip searing: Browning the beef adds deeper flavor to the finished dish.
- Cut vegetables into large pieces: This helps prevent them from becoming mushy during long cooking.
- Cook on LOW for best results: Slow, gentle cooking helps break down tough connective tissue.
- Make extra gravy: Add a little additional beef broth if you prefer more sauce.
- Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.
