Slow Cooker Balsamic Garlic Beef Pot Roast

- 3–4 lb beef chuck roast
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 large yellow onion, roughly chopped
- 3 carrots, cut into chunks
- 2 celery stalks, chopped
- 8 oz mushrooms, sliced or halved
- 5 garlic cloves, minced
- 1 cup beef broth
- â…“ cup balsamic vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar or honey
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons butter
For the Gravy
- 2 tablespoons cornstarch
- 3 tablespoons cold water
InstructionsÂ
- Pat the beef chuck roast dry with paper towels. Season it evenly on all sides with salt, black pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Add the roast and sear for 3–4 minutes on each side, until deeply browned. Searing creates a flavorful caramelized crust.
- Add the chopped onion, carrots, celery, mushrooms, and minced garlic to the bottom of the slow cooker.
- Place the seared beef roast directly over the vegetables.
- In a medium bowl, whisk together the beef broth, balsamic vinegar, Worcestershire sauce, tomato paste, brown sugar or honey, thyme, and rosemary.
- Pour the balsamic mixture over and around the beef. Place the butter on top of the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours. The roast is ready when it is extremely tender and easily separates with a fork.
- Carefully transfer the roast to a serving platter and loosely cover it with foil.
- In a small bowl, whisk the cornstarch and cold water together until completely smooth.
- Stir the cornstarch slurry into the cooking liquid and vegetables remaining in the slow cooker.
- Cover and cook on HIGH for another 10–15 minutes, stirring occasionally, until the balsamic garlic gravy becomes glossy and slightly thickened.
- Return the beef to the slow cooker or arrange it on a serving platter. Spoon plenty of the mushroom, onion, and balsamic garlic gravy over the meat before serving.
Tips
Beef chuck roast is ideal because its marbling slowly breaks down during cooking, producing juicy, fork-tender meat.
Although you can skip searing when you’re short on time, browning the roast first gives it a deeper flavor and a more appetizing exterior.
For a sweeter balsamic glaze, add another tablespoon of honey or brown sugar. For a stronger savory flavor, add a little extra Worcestershire sauce.
Avoid frequently lifting the slow-cooker lid. Every time you open it, heat escapes and can extend the cooking time.
If the gravy becomes thicker than you like, simply stir in a splash of warm beef broth until it reaches your preferred consistency.
Storage
Store leftover beef, vegetables, and gravy together in an airtight container in the refrigerator for 3–4 days. Keeping the beef in the gravy helps prevent it from drying out.
For longer storage, freeze cooled portions in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator and gently reheat with the gravy.
