InstructionsÂ
Step 1: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2: Wash and thoroughly dry the sweet potatoes. Slice them into even rounds about ½–¾ inch thick.
Step 3: Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Brush both sides with olive oil, then season with salt, black pepper, and fresh thyme.
Step 4: Roast for 20–25 minutes, flipping the rounds halfway through cooking, until tender in the center and lightly caramelized around the edges.
Step 5: Remove the baking sheet from the oven and place a small slice of Brie cheese on top of each sweet potato round.
Step 6: Sprinkle the chopped walnuts and dried cranberries over the Brie. Return the tray to the oven for 3–5 minutes, just until the Brie becomes warm, soft, and creamy.
Step 7: Carefully transfer the sweet potato rounds to a serving platter. Drizzle with honey or maple syrup, followed by a light drizzle of balsamic glaze.
Step 8: Garnish with fresh rosemary or thyme and serve while warm.
Tips
For the best results, cut the sweet potato rounds as evenly as possible so they cook at the same rate. Do not roast them too long after adding the Brie, as the cheese should soften without completely melting off the rounds.
