Keto Avocado & Feta Stuffed Sweet Potato Boats
Prep Time: 15 minutes
Cook Time: 45 minutes
Servings: 4
Ingredients
2 medium sweet potatoes, halved lengthwise
2 ripe avocados, sliced
½ cup crumbled feta cheese
1 tablespoon olive oil or melted butter
1 tablespoon honey or balsamic glaze (optional)
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Prepare the Sweet Potatoes
Wash and dry the sweet potatoes thoroughly. Slice each potato in half lengthwise and pierce the skin several times with a fork. Brush the cut surfaces lightly with olive oil or melted butter, then season with salt and black pepper.
Step 3: Roast the Sweet Potatoes
Place the sweet potato halves cut-side down on the prepared baking sheet. Roast for 35–45 minutes, or until the flesh becomes soft and tender and the edges develop a slightly caramelized texture.
Step 4: Create the Sweet Potato Boats
Remove the sweet potatoes from the oven and carefully flip them cut-side up. Allow them to cool for a few minutes. Using a fork, gently mash the centers to create small pockets for the filling without damaging the skins.
Step 5: Add the Avocado
Slice the ripe avocados into thin, even pieces. Arrange the avocado slices generously inside each roasted sweet potato boat.
Step 6: Add the Feta Cheese
Sprinkle crumbled feta cheese evenly over the avocado slices. The tangy, slightly salty feta complements the natural sweetness of the roasted sweet potatoes.
Step 7: Garnish and Drizzle
Sprinkle freshly chopped parsley over each boat. Add a light drizzle of honey or balsamic glaze if desired, then squeeze fresh lemon juice over the top for a bright, refreshing flavor.
Step 8: Serve and Enjoy
Serve the stuffed sweet potato boats immediately while the potatoes are warm and the avocado is fresh and creamy. Enjoy them as a wholesome lunch, light dinner, or flavorful side dish.
Tips
Choose Evenly Sized Potatoes: Select sweet potatoes of similar size to ensure they roast evenly.
Use Ripe Avocados: Choose avocados that are slightly soft but still firm enough to hold their shape when sliced.
Prevent Browning: Add avocado and lemon juice just before serving to maintain a fresh, vibrant green color.
Make Them Extra Creamy: Mash a small amount of avocado into the sweet potato flesh before adding the remaining slices.
Add Crunch: Sprinkle toasted pumpkin seeds, chopped walnuts, or sunflower seeds over the top for extra texture.
Customize the Flavor: Add smoked paprika, chili flakes, or garlic powder for a savory twist.
Skip the Sweet Drizzle: For a less sweet version, omit the honey and balsamic glaze and use extra lemon juice instead.
Meal Prep Friendly: Roast the sweet potatoes in advance and refrigerate them for up to 3–4 days. Reheat thoroughly and add the avocado, feta, and parsley just before serving.
