- 1 tablespoon fresh parsley, chopped
For the Rich Brown Gravy
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth or a combination of beef broth and roasting juices
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- Salt and black pepper to taste
Instructions
Step 1: Prepare the Beef
Remove the beef roast from the refrigerator approximately 30 minutes before cooking. Pat it dry thoroughly with paper towels to remove excess moisture. This helps develop a beautiful golden-brown crust during searing.
Step 2: Prepare the Garlic Herb Butter
In a mixing bowl, combine softened butter, olive oil, minced garlic, rosemary, thyme, parsley, kosher salt, black pepper, smoked paprika, onion powder, Dijon mustard, and Worcestershire sauce. Mix until a smooth, fragrant paste forms.
Step 3: Season the Beef Roast
Place the beef on a clean cutting board. Rub the garlic herb butter mixture generously over the entire roast, coating all sides evenly. Make sure the garlic and herbs are well distributed.
Step 4: Sear the Beef
Preheat your oven to 375°F (190°C). Heat a large oven-safe skillet over medium-high heat. Carefully add the seasoned beef and sear for approximately 2–3 minutes per side until a deep golden-brown crust forms. Reduce the heat if the garlic begins to burn.
Step 5: Roast the Beef
Transfer the seared beef to a roasting pan or leave it in the oven-safe skillet. Place it in the preheated oven and roast for approximately 1–1½ hours, depending on the size and thickness.
Begin checking the internal temperature after 60 minutes. For food safety, cook the beef roast to an internal temperature of 145°F (63°C), followed by a rest of at least 3 minutes. Use a meat thermometer for accurate results.
Step 6: Prepare the Potatoes
While the beef roasts, wash and cut the baby potatoes into evenly sized pieces. Place them in a large bowl and add olive oil, minced garlic, dried rosemary, Italian seasoning, paprika, salt, and black pepper. Toss thoroughly until evenly coated.
Step 7: Roast the Potatoes
Arrange the potatoes in a single layer on a large baking sheet, with the cut sides facing down. Roast at 425°F (220°C) for approximately 35–45 minutes, turning halfway through cooking.
Use a separate oven or roast the potatoes after removing the beef. Cook until golden brown, crispy on the outside, and tender inside. Garnish with chopped parsley.
Step 8: Rest the Beef
Remove the cooked beef from the oven and transfer it to a cutting board. Cover loosely with aluminum foil and allow it to rest for 15–20 minutes before slicing. Resting helps redistribute the juices throughout the meat.
Step 9: Prepare the Brown Gravy
Melt butter in a saucepan over medium heat. Add flour and whisk continuously for 1–2 minutes until lightly golden.
Gradually pour in the beef broth and reserved roasting juices while whisking to prevent lumps. Add Worcestershire sauce, garlic powder, salt, and black pepper.
Simmer for 5–7 minutes until the gravy becomes smooth, glossy, and slightly thickened. Add additional broth if the gravy becomes too thick.
Step 10: Slice and Serve
Slice the rested beef against the grain into evenly sized pieces. Arrange the slices on a large serving platter alongside the crispy roasted potatoes.
Spoon warm brown gravy over the beef and garnish with fresh rosemary and parsley. Serve the remaining gravy separately.
Tips
- Choose a well-marbled boneless sirloin roast for better flavor and tenderness.
- Pat the beef dry before seasoning to achieve a golden-brown crust.
- Use fresh garlic, rosemary, and thyme for a more aromatic flavor.
- Avoid burning the garlic during searing by adjusting the skillet temperature.
- Always use a meat thermometer to prevent overcooking.
- Allow the beef to rest before slicing to preserve its natural juices.
- Slice against the grain for tender, easy-to-chew pieces.
- Cut potatoes into similar-sized pieces for even roasting.
- Avoid overcrowding the baking sheet to help the potatoes become crispy.
- Use roasting juices in the brown gravy for deeper flavor.
- For extra crispy potatoes, parboil them for 7–10 minutes before roasting.
- Serve the beef with steamed green beans, roasted carrots, or asparagus for a complete meal.
Storage
Refrigerator
Allow the roasted beef, potatoes, and gravy to cool slightly before storing. Transfer them into separate airtight containers and refrigerate within 2 hours of cooking. Store for up to 3–4 days.
Freezer
Place cooled beef slices in freezer-safe containers with a small amount of gravy to help maintain moisture. Freeze for up to 2–3 months for best quality. The gravy can also be frozen separately.
Reheating
Preheat the oven to 300°F (150°C). Place the beef slices in a covered baking dish with a little beef broth or gravy. Heat gently until the internal temperature reaches 165°F (74°C).
Reheat the potatoes separately in an oven or air fryer at 400°F (200°C) until hot and crispy.
Warm the gravy in a saucepan over low heat, stirring occasionally until heated through.
Make-Ahead Instructions
Prepare the garlic herb butter and season the beef the day before cooking. Keep the seasoned beef covered in the refrigerator.
The gravy can also be prepared ahead of time and reheated before serving.
For the best texture and flavor, roast the potatoes fresh shortly before serving.
