Servings: 6–8
Cuisine: American
Cooking Method: Oven-Braised

Ingredients

  • 3–4 lb (1.4–1.8 kg) boneless beef chuck roast
  • 2 tablespoons olive oil
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1½ lb (680 g) baby potatoes
  • 4 large carrots, cut into thick chunks
  • 2 tablespoons fresh parsley, chopped

Instructions

Step 1: Preheat the Oven

Preheat your oven to 325°F (165°C). Pat the beef chuck roast dry with paper towels and season all sides evenly with salt and black pepper.

Step 2: Sear the Beef

Heat the olive oil in a large Dutch oven over medium-high heat. Add the roast and sear for 4–5 minutes per side until a deep golden-brown crust forms. Transfer the beef to a plate.

Step 3: Sauté the Aromatics

Reduce the heat to medium and add the chopped onion to the same pot. Cook for 4–5 minutes until softened. Stir in the minced garlic and tomato paste, cooking for another minute until fragrant.

Step 4: Make the Braising Liquid

Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pot to release the flavorful browned bits. Add the dried thyme, rosemary, and bay leaves. Stir to combine.

Step 5: Braise the Roast

Return the beef and any accumulated juices to the pot. Ensure the liquid reaches approximately one-third to halfway up the sides of the meat, adding extra broth if necessary.

Bring the liquid to a gentle simmer, cover the pot tightly, and transfer it to the preheated oven. Cook for 2½ hours.

Step 6: Add the Potatoes and Carrots

Arrange the baby potatoes and carrot chunks around the roast. Spoon some of the braising liquid over the vegetables to coat them with flavor.

Cover the pot and return it to the oven for another 1–1½ hours, or until the vegetables are tender and the beef easily pulls apart with a fork. If the roast remains firm, continue cooking in 20–30-minute increments until tender.

Step 7: Rest the Meat and Finish the Gravy

Transfer the roast to a serving platter and loosely cover it with foil. Let it rest for 15 minutes.

Remove the bay leaves from the cooking liquid and skim off any excess fat. For a richer, more concentrated gravy, simmer the liquid uncovered on the stovetop for 5–10 minutes. If the vegetables are already tender, remove them before reducing the sauce.

Step 8: Serve and Garnish

Slice the beef against the grain or pull it into large, tender pieces. Arrange the potatoes and carrots around the meat, generously spoon the garlic herb gravy over everything, and finish with freshly chopped parsley.

Serve warm for a comforting family dinner.

Tips for the Best Pot Roast

  • Choose well-marbled beef: Chuck roast is ideal because its connective tissue breaks down during slow braising, creating tender, juicy meat.
  • Brown the meat thoroughly: A deep sear develops rich flavor and adds color to the finished gravy.
  • Keep the lid tightly closed: This helps maintain moisture and ensures even braising.
  • Add vegetables later: Adding the potatoes and carrots during the final cooking stage helps prevent them from becoming mushy.
  • Check for tenderness: The roast is ready when a fork slides in easily and the meat pulls apart without resistance.
  • Thicken the gravy if desired: Mix 1 tablespoon cornstarch with 1 tablespoon cold water. Stir the slurry into the simmering sauce and cook for 2–3 minutes until thickened.

Storage Instructions

Refrigerator: Store leftover beef, vegetables, and gravy in airtight containers within 2 hours of cooking. Refrigerate for 3–4 days.

Freezer: Freeze the beef and gravy in freezer-safe containers for up to 3 months. Potatoes may become softer or grainier after freezing.

Reheating: Reheat gently in a covered saucepan or oven-safe dish with a splash of beef broth. Keep the meat in the gravy to retain moisture, and heat until thoroughly hot.

Serving Suggestions

Pair this garlic herb pot roast with crusty bread, steamed green beans, roasted Brussels sprouts, or a fresh garden salad. The rich gravy also tastes wonderful over mashed potatoes or buttered egg noodles.

This classic oven-braised pot roast delivers tender beef, flavorful vegetables, and savory garlic herb gravy in one satisfying dish—perfect for Sunday dinners, family gatherings, or a cozy meal at home.
