Ingredients
2 cans chickpeas, drained and rinsed
1 cup cucumber, diced
3/4 cup dried cranberries
3/4 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Drain and rinse the chickpeas thoroughly. Pat them dry with paper towels to remove excess moisture.
Add the chickpeas to a large mixing bowl.
Dice the cucumber into small bite-size pieces and add it to the bowl.
Add the dried cranberries, crumbled feta cheese, chopped parsley, and fresh dill.
In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and black pepper.
Pour the dressing over the chickpea mixture.
Gently toss everything together until the chickpeas and vegetables are evenly coated with the dressing.
