Ingredients

  • 1 cup cottage cheese
  • 2 tablespoons unsweetened cocoa powder
  • 2–3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted dark chocolate, optional for a richer mousse
  • 1–2 tablespoons milk, only if needed for blending
  • Pinch of salt

Instructions

  1. Add the cottage cheese to a high-speed blender or food processor.
  2. Add the cocoa powder, honey or maple syrup, vanilla extract, and a small pinch of salt.
  3. If you want a deeper chocolate flavor and a thicker, dessert-like texture, add 2 tablespoons of melted dark chocolate.
  4. Blend everything for about 1–2 minutes, stopping once or twice to scrape down the sides.
  5. Continue blending until the cottage cheese becomes completely smooth. You should no longer see any curds. The mixture should look thick, creamy, and silky like chocolate pudding or mousse.
  6. If the mixture is too thick for your blender, add milk 1 tablespoon at a time. Avoid adding too much because the mousse should stay thick enough to hold soft peaks.
  7. Taste the mousse. Add another teaspoon of honey or maple syrup if you prefer it sweeter.
  8. Spoon the chocolate mousse into small dessert cups or containers.
  9. Cover and refrigerate for at least 30 minutes. For an even thicker texture, chill it for 1–2 hours.
  10. Give it a gentle stir before serving.

Tips for the Smoothest Mousse

Use full-fat cottage cheese if you want the richest and creamiest texture.

A high-speed blender works best. The longer you blend the cottage cheese, the smoother and more mousse-like it becomes.

If your cottage cheese contains a lot of liquid, drain some of the excess before blending.

For a stronger chocolate flavor, use Dutch-process cocoa powder or add the optional melted dark chocolate.

Do not add too much milk. The mixture may initially look thick, but it loosens as it blends.

Serve the mousse chilled with fresh berries, shaved dark chocolate, chopped almonds, banana slices, or a small spoonful of whipped cream.

You can also layer it with berries and granola to make a quick chocolate breakfast parfait.

Storage

Transfer the mousse to an airtight container and refrigerate for up to 3 days.

If making individual portions for work or meal prep, divide the mousse into small sealed containers immediately after blending.

Give it a quick stir before eating because a small amount of moisture may separate during storage.
