Cheesy Tomato and Basil Garlic Toast
Preparation Time: 10 minutes
Cooking Time: 12–15 minutes
Total Time: 24–27 minutes
Servings: 6 toasts
Cuisine: Italian-Inspired
Cooking Method: Oven-Baked
Ingredients
- 6 thick slices sourdough or rustic bread
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1½ cups shredded mozzarella cheese
- 2 medium ripe but firm tomatoes, thinly sliced
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup fresh basil leaves, roughly torn
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Prepare the Garlic Oil
In a small bowl, combine the olive oil and minced garlic. Stir well to distribute the garlic evenly throughout the oil. Lightly brush the mixture over both the surface and edges of each bread slice for a delicious garlic-infused flavor.
Step 3: Toast the Bread
Arrange the bread slices in a single layer on the prepared baking sheet. Bake for 5–6 minutes, until the edges become lightly golden and the surface is slightly crisp. This initial toasting helps the bread hold the toppings without becoming soggy.
Step 4: Prepare the Tomatoes
While the bread is toasting, wash and thinly slice the tomatoes. Pat the slices gently with a paper towel to remove excess moisture. This step helps prevent the finished garlic toast from becoming watery.
Step 5: Add the Cheese and Tomato Toppings
Remove the lightly toasted bread from the oven. Divide the shredded mozzarella evenly among the six slices, spreading it close to the edges.
Arrange 2–3 tomato slices over each piece of bread. Sprinkle with dried oregano, salt, and freshly ground black pepper. If desired, finish with a light sprinkling of grated Parmesan for an extra savory, cheesy flavor.
Step 6: Bake Until Golden and Bubbly
Return the baking sheet to the oven and bake for another 7–9 minutes, or until the mozzarella has melted, the cheese is bubbling, and the bread edges are golden brown.
For a more golden, lightly browned cheese topping, switch to the broiler for the final 1–2 minutes. Watch carefully to prevent the bread and cheese from burning.
Step 7: Garnish and Serve
Remove the garlic toasts from the oven and allow them to rest for 2 minutes. Scatter the freshly torn basil leaves over the warm cheese and tomatoes.
Serve immediately while the bread is crisp, the mozzarella is gooey, and the tomatoes are warm and juicy. Enjoy these cheesy tomato and basil garlic toasts as an appetizer, snack, or flavorful side dish.
Tips for the Best Results
- Choose sturdy bread: Sourdough or rustic bread sliced about ¾ inch thick provides a firm base for the toppings.
- Remove excess tomato moisture: Patting the tomato slices dry helps keep the toast crisp.
- Use low-moisture mozzarella: It melts beautifully while releasing less liquid than fresh mozzarella.
- Add fresh basil after baking: This preserves its bright color, delicate aroma, and fresh flavor.
- Enhance the garlic flavor: After the initial toasting, rub the bread lightly with a cut garlic clove before adding the cheese.
- Avoid overcrowding: Arrange the slices in a single layer so the bread heats evenly and the cheese melts consistently.
Storage and Reheating
Store leftover garlic toasts in an airtight container in the refrigerator for up to 2 days. For the best texture, reheat them in an oven or air fryer at 350°F (175°C) until the cheese is hot and the bread becomes crisp again.
Keep any extra fresh basil separate and add it after reheating. Avoid using the microwave if possible, as it can make the bread soft and chewy.
