Cheesy Potato & Egg Bake

Ingredients
- 4 medium potatoes, peeled and diced
- 6 large eggs
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup milk
- 1 small onion, finely chopped
- 1/2 cup diced bell pepper
- 2 tbsp butter or olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp chopped fresh parsley or green onions
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish.
- Place the diced potatoes in a pot of lightly salted water and boil for about 6–8 minutes, just until slightly tender. Drain well.
- Heat butter or olive oil in a skillet over medium heat. Add the onion and bell pepper and cook for 3–4 minutes until softened.
- Add the partially cooked potatoes to the skillet. Sprinkle with garlic powder, paprika, salt, and black pepper. Cook for another 3–4 minutes, stirring gently.
- Transfer the potato mixture to the prepared baking dish and spread it into an even layer.
- In a large bowl, whisk together the eggs and milk until smooth.
- Stir about 1 cup of the shredded cheddar cheese into the egg mixture.
- Pour the egg mixture evenly over the potatoes.
- Sprinkle the remaining cheese over the top.
- Bake uncovered for 25–30 minutes, or until the eggs are fully set and the cheese is melted and lightly golden.
- Remove from the oven and let the bake rest for about 5 minutes before slicing.
- Garnish with chopped parsley or green onions and serve warm.

For extra flavor, add cooked bacon, sausage, ham, or shredded chicken.
You can use a mix of cheddar and mozzarella for a cheesier, stretchier topping.
