This recipe is inspired by the beetroot, ginger, and lemon visible in the picture.

Ingredients

  • 2 medium raw beetroots, washed, peeled, and diced
  • ½-inch piece fresh ginger, peeled
  • 2 tablespoons fresh lemon juice
  • 1½ cups cold water
  • Ice cubes, optional
  • 1 small apple, cored and chopped, optional for sweetness

Instructions

  1. Place the diced beetroot, ginger, lemon juice, and water in a blender. Add the apple if using.
  2. Blend on high for 60–90 seconds, or until as smooth as possible. Add a little more water if needed.
  3. For a smooth juice like the picture, pour through a fine-mesh strainer into a jug, pressing gently with a spoon. For more fiber, leave it unstrained.
  4. Taste and adjust the lemon juice or water to your preference.
  5. Pour into two glasses, add ice if desired, and serve immediately.

Tips

  • Chop the beetroot into small pieces to help it blend.
  • Start with a small amount of ginger, then add more for a stronger flavor.
  • Beetroot stains easily, so rinse utensils and surfaces promptly.

Storage

Refrigerate in a clean, sealed container and use within 24 hours. Shake or stir before serving.
