Ingredients
For the Salad
- 3 medium beetroots, cooked, peeled, and cut into wedges
- 2 ripe avocados, sliced or cubed
- 2 large oranges, peeled and segmented
- ¼ cup fresh cilantro or parsley, chopped
- 2 tablespoons green onion, finely sliced
- 2 tablespoons pumpkin seeds or sesame seeds, optional
- Salt, to taste

- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup
- ½ teaspoon Dijon mustard, optional
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- If using fresh beets, wash them well and place them in a saucepan. Cover with water and boil for about 30–40 minutes, or until they are tender when pierced with a knife.
- Drain the beets and let them cool. Peel off the skins and cut the beets into thick slices or wedges.
- Peel the oranges and carefully separate them into segments. Remove as much of the white membrane as possible.
- Cut the avocados in half, remove the pits, peel, and slice into wedges or large cubes.
- Arrange the beetroot pieces, avocado, and orange segments on a large serving plate or in a salad bowl.
- Sprinkle with chopped cilantro or parsley and sliced green onion.
- In a small bowl, whisk together the olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and black pepper until well combined.
- Drizzle the dressing evenly over the salad.
