This simple breakfast bake turns out soft, puffy, and lightly golden on top. It uses only three basic ingredients and works well as an easy breakfast when you want something filling without a long ingredient list.

Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a small baking dish, around 8 x 8 inches, or use a similar-sized oven-safe dish.
  3. Add the eggs to a large mixing bowl and whisk until smooth.
  4. Add the cottage cheese and mix well.
  5. Stir in the shredded cheese until evenly combined.
  6. Pour the mixture into the prepared baking dish.
  7. Spread it evenly with a spatula.
  8. Bake for about 25–30 minutes, or until the center is set and the top is puffed and golden brown.
  9. Remove from the oven and let it rest for 5 minutes before slicing.
  10. Serve warm.

Tips

For the smoothest texture, blend the eggs and cottage cheese for about 20–30 seconds before stirring in the shredded cheese.

Mozzarella gives a mild, soft result, while cheddar gives it a stronger savory flavor.

Do not open the oven too early because the bake rises while cooking and may deflate quickly.

It will naturally settle a little after coming out of the oven.

Optional Additions

If you do not mind using more than three ingredients, you can add:

  • Black pepper
  • Chopped chives
  • Spinach
  • Diced bell pepper
  • Cooked turkey bacon
  • Fresh parsley

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat individual portions in the microwave for about 30–45 seconds, or warm them in a low oven.
