Ingredients
For the Cod
- 2 thick, skinless cod fillets (6–7 oz each)
- 1 tablespoon olive oil
- ½ teaspoon paprika (sweet or smoked)
- ¼ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
For the Creamy Orange Butter Sauce
- 3 tablespoons unsalted butter, divided
- 3 garlic cloves, finely minced
- ⅓ cup freshly squeezed orange juice
- 1 teaspoon fresh orange zest
- 3 tablespoons heavy cream
- 1 teaspoon Dijon mustard
- ¼ teaspoon red pepper flakes
For Garnishing
- 1 tablespoon freshly chopped parsley
- 3–4 thin lemon or orange wedges
Instructions
Step 1: Prepare the Cod
Pat the cod fillets completely dry using paper towels. Season both sides with salt, black pepper, paprika, and garlic powder. Make sure the seasoning is evenly distributed.
Step 2: Sear the Fish
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter melts and the skillet is hot, carefully place the cod fillets in the pan.
Cook undisturbed for 3–4 minutes until a beautiful golden crust forms. Gently flip and cook for another 2–3 minutes, depending on thickness. Transfer the fish to a plate.
Step 3: Prepare the Orange Garlic Sauce
Reduce the heat to medium. Add minced garlic and red pepper flakes to the same skillet. Sauté for about 30 seconds until fragrant.
Pour in the fresh orange juice and add the orange zest. Stir gently, scraping up the flavorful browned bits from the bottom of the skillet. Allow the mixture to simmer for approximately 2 minutes until slightly reduced.
Step 4: Make the Sauce Creamy
Whisk in the heavy cream and Dijon mustard. Let the sauce gently simmer for about 1 minute.
Reduce the heat to low and gradually add the remaining 2 tablespoons of cold butter, swirling or whisking until the sauce becomes smooth, creamy, and glossy.
Taste and adjust the salt and pepper as needed.
Step 5: Combine the Fish and Sauce
Carefully return the seared cod fillets to the skillet. Spoon the warm orange butter sauce over the fish and gently heat until the cod is fully cooked and flakes easily with a fork. The thickest part should reach 145°F (63°C).
Step 6: Garnish and Serve
Sprinkle freshly chopped parsley over the cod. Garnish with lemon or orange wedges and serve immediately.
Pair with fluffy rice, creamy mashed potatoes, roasted asparagus, or steamed vegetables.
Tips for the Best Pan-Seared Cod
- Dry the fish thoroughly: Removing excess moisture helps create a golden crust.
- Use fresh orange juice: Freshly squeezed juice provides a brighter, more natural citrus flavor.
- Avoid overcrowding: Give each fillet enough space to sear properly.
- Don’t overcook the cod: Cod cooks quickly and can become dry if left on the heat too long.
- Add cold butter slowly: This helps create a silky, restaurant-style sauce.
- Control the spice: Reduce or omit the red pepper flakes for a milder flavor.
- Serve immediately: The sauce tastes best when freshly prepared and warm.
