Prep Time: 15 mins Cook Time: 25 mins

Servings: 4

Ingredients

For the Chicken & Seasoning

4 large boneless, skinless chicken breasts (6–8 oz each)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried oregano or Italian seasoning

½ teaspoon salt

½ teaspoon freshly ground black pepper

For the Spinach, Cranberry & Feta Filling

2 cups fresh baby spinach, roughly chopped

½ cup crumbled feta cheese

⅓ cup dried cranberries, finely chopped

2 garlic cloves, minced

1 tablespoon olive oil

For the Butter Sauce & Garnish

2 tablespoons unsalted butter

2 fresh rosemary sprigs

¼ cup fresh or dried whole cranberries

1 tablespoon honey or balsamic glaze (optional)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Prepare an oven-safe skillet for searing and baking the chicken.

Step 2: Prepare the Filling

In a medium mixing bowl, combine chopped baby spinach, crumbled feta cheese, dried cranberries, minced garlic, and olive oil. Stir gently until everything is evenly mixed.

Step 3: Create Chicken Pockets

Place each chicken breast on a cutting board. Using a sharp knife, carefully slice horizontally into the thickest side to create a deep pocket without cutting all the way through.

Step 4: Stuff the Chicken

Divide the spinach, feta, and cranberry filling evenly among the four chicken breasts. Carefully spoon the mixture into each pocket and secure the openings with toothpicks.

Step 5: Season the Chicken

Rub the chicken breasts with olive oil. In a small bowl, combine smoked paprika, garlic powder, oregano, salt, and black pepper. Sprinkle the seasoning mixture evenly over both sides of each breast.

Step 6: Sear Until Golden

Heat an oven-safe skillet over medium-high heat with a little additional olive oil if needed. Add the stuffed chicken breasts and sear for 2–3 minutes on one side. Flip carefully and cook for another 1–2 minutes until lightly golden.

Step 7: Add Butter and Cranberries

Reduce the heat slightly. Add butter, rosemary sprigs, and whole cranberries to the skillet. Allow the butter to melt and coat the chicken with the aromatic pan juices.

Step 8: Bake Until Tender

Transfer the skillet to the preheated oven. Bake for approximately 18–22 minutes, depending on the thickness of the chicken breasts. Check that the thickest part of the chicken reaches an internal temperature of 165°F (74°C), measuring the meat rather than the filling.

Step 9: Rest and Serve

Remove the chicken from the oven and allow it to rest for 5 minutes. Carefully remove the toothpicks, spoon the buttery cranberry sauce over each breast, and finish with a drizzle of honey or balsamic glaze if desired.

Tips for the Best Stuffed Chicken

Avoid overstuffing: Leave enough space to close each chicken breast securely so the filling stays inside.

Use quality feta: Block feta packed in brine provides a creamier texture and richer flavor.

Remove excess spinach moisture: If using cooked spinach, squeeze it dry before mixing with the other ingredients.

Balance the sweetness: Dried cranberries provide a sweet contrast to the salty feta. Choose unsweetened cranberries for a less sweet filling.

Prevent dry chicken: Use a meat thermometer to check doneness rather than relying only on cooking time.

Make ahead: Prepare and stuff the chicken up to 24 hours in advance, refrigerate covered, and cook when ready.

Serving suggestion: Pair with roasted potatoes, steamed green beans, mashed cauliflower, or a fresh garden salad.
