Cook Time: 5 minutes
Servings: 6 individual cups

Ingredients
Cookie Crust
20 chocolate sandwich cookies
4 tablespoons unsalted butter, melted
Cookies and Cream Filling
16 ounces cream cheese, softened
¾ cup powdered sugar
1 teaspoon vanilla extract
1½ cups cold heavy whipping cream
8 chocolate sandwich cookies, finely crushed
Pinch of salt
Chocolate Ganache
1 cup semisweet chocolate chips
½ cup heavy whipping cream
1 tablespoon unsalted butter, optional
Decoration
6 chocolate sandwich cookies
¼ cup crushed chocolate sandwich cookies
Instructions
Prepare the Cookie Crust
Place 20 chocolate sandwich cookies in a food processor. Pulse until they become fine crumbs.
Transfer the crumbs to a medium bowl and add the melted butter.
Mix until all the crumbs are evenly moistened and resemble wet sand.
Divide the cookie mixture among six clear dessert cups.
Press the crumbs firmly into the bottom of each cup using the back of a spoon or a small flat-bottomed glass.
Refrigerate the cups while preparing the cheesecake filling.
Prepare the Cookies and Cream Filling
Place the softened cream cheese in a large mixing bowl. Beat it for 1–2 minutes until smooth and creamy.
Add the powdered sugar, vanilla extract, and a small pinch of salt. Continue beating until fully combined.
In a separate chilled bowl, beat the cold heavy whipping cream until stiff peaks form. Do not overbeat it.
Add approximately one-third of the whipped cream to the cream cheese mixture. Fold gently to loosen the mixture.
Fold in the remaining whipped cream until the filling is light, smooth, and evenly combined.
Add the finely crushed sandwich cookies and fold them gently through the filling. Avoid overmixing so the filling maintains its fluffy texture.
Spoon or pipe the filling evenly over the chilled cookie crusts.
Smooth the top of each serving and return the cups to the refrigerator.
Prepare the Chocolate Ganache
Place the semisweet chocolate chips in a heat-safe bowl.
Heat the heavy cream in a small saucepan over medium-low heat until it begins steaming around the edges. Do not allow it to boil vigorously.
Pour the hot cream over the chocolate chips. Let the mixture stand undisturbed for 2 minutes.
Stir slowly from the center outward until the ganache becomes completely smooth and glossy.
Stir in one tablespoon of butter for additional shine, if desired.
Allow the ganache to cool for 10–15 minutes. It should remain pourable but must not be hot enough to melt the cheesecake layer.
Assemble the Dessert Cups
Spoon a layer of cooled chocolate ganache over each cheesecake cup.
Tilt the cups gently or use the back of a spoon to spread the ganache evenly to the edges.
Refrigerate the assembled desserts for at least 3 hours or until the filling is firm and the chocolate topping is set.
Before serving, decorate each cup with one chocolate sandwich cookie and a small amount of cookie crumbs.
Serve chilled.
Tips
Use full-fat block cream cheese for the firmest, creamiest filling.
Allow the cream cheese to soften at room temperature to prevent lumps.
Keep the heavy cream cold until you are ready to whip it.
Let the ganache cool before pouring it over the filling.
For neat layers, wipe the inside of the cups after adding each component.
A piping bag makes it easier to add the filling cleanly.
Crush the cookies finely for a compact crust.
For a softer crust, use slightly less melted butter.
Do not remove the cream filling from the sandwich cookies before crushing them.

Why is my filling too soft?
The whipped cream may not have reached stiff peaks, the cream cheese may have been too warm, or the dessert may require additional chilling.

Can I use whipped topping?
Yes. Replace the freshly whipped cream with approximately three cups of thawed whipped topping.

Can I prepare these cups the night before?
Yes. Assemble and refrigerate them overnight, but add the cookie garnish before serving.

How do I prevent the ganache from melting the filling?
Let the ganache cool until it is slightly thickened and no longer warm before pouring it over the cheesecake layer.
