Ingredients

Crunchy Base

Cheesecake Filling

  • ¾ cup plain nonfat Greek yogurt
  • ¼ cup low-fat cottage cheese
  • 1 ounce reduced-fat cream cheese, softened
  • ½ scoop vanilla protein powder
  • 1 tablespoon sugar-free caramel sauce
  • ½ teaspoon vanilla extract
  • Pinch of sea salt

Topping

  • 1 tablespoon sugar-free caramel sauce
  • 1 tablespoon chopped pecans or crushed protein cereal
  • A few small pieces of sugar-free caramel candy, optional
  • Flaky sea salt

Instructions

  1. Combine the almond flour, chopped pecans, melted butter, sweetener, and salt in a small bowl. Press the mixture firmly into the bottom of a serving bowl or food-storage container.
  2. Add the Greek yogurt, cottage cheese, cream cheese, protein powder, caramel sauce, vanilla, and salt to a blender or food processor.
  3. Blend until completely smooth, thick, and creamy. If the filling is too thick, add one teaspoon of milk. If it is too thin, mix in a little more protein powder.
  4. Spoon the cheesecake mixture over the crunchy base and spread it evenly.
  5. Drizzle the remaining caramel sauce over the filling. Swirl it gently using the tip of a spoon.
  6. Finish with chopped pecans, optional sugar-free caramel pieces, and a small pinch of flaky sea salt.
  7. Refrigerate for at least 10 minutes before enjoying. For a firmer cheesecake texture, chill it for 30–60 minutes.

  • Blend the cottage cheese thoroughly so the filling becomes silky and lump-free.
  • Choose a thick Greek yogurt to prevent a runny cheesecake layer.
  • Adjust the sweetener according to the sweetness of your protein powder.
  • For additional crunch, sprinkle the topping on immediately before serving.
