Beetroot, Ginger & Lemon Juice

This recipe is inspired by the beetroot, ginger, and lemon visible in the picture.
Ingredients
- 2 medium raw beetroots, washed, peeled, and diced
- ½-inch piece fresh ginger, peeled
- 2 tablespoons fresh lemon juice
- 1½ cups cold water
- Ice cubes, optional
- 1 small apple, cored and chopped, optional for sweetness
Instructions
- Place the diced beetroot, ginger, lemon juice, and water in a blender. Add the apple if using.
- Blend on high for 60–90 seconds, or until as smooth as possible. Add a little more water if needed.
- For a smooth juice like the picture, pour through a fine-mesh strainer into a jug, pressing gently with a spoon. For more fiber, leave it unstrained.
- Taste and adjust the lemon juice or water to your preference.
- Pour into two glasses, add ice if desired, and serve immediately.
Tips
- Chop the beetroot into small pieces to help it blend.
- Start with a small amount of ginger, then add more for a stronger flavor.
- Beetroot stains easily, so rinse utensils and surfaces promptly.
Storage
Refrigerate in a clean, sealed container and use within 24 hours. Shake or stir before serving.
