Ingredients

- 1 cup cottage cheese, slightly drained

- Preheat the oven to 375°F (190°C). Lightly grease an 8-inch or 9-inch round baking dish or oven-safe skillet with olive oil or butter.
- Heat about half of the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 20–30 seconds until fragrant.
- Add the chopped spinach and cook for 1–2 minutes, stirring frequently, until completely wilted.
- Remove the spinach from the heat. Let it cool slightly, then gently press out excess moisture with a paper towel. This helps prevent the frittata from becoming watery.
- In a large mixing bowl, whisk together the eggs, cottage cheese, baking powder, salt, and black pepper until well combined and slightly airy.
- For an extra-smooth, fluffy texture, blend the eggs and cottage cheese in a blender for about 20 seconds instead of whisking.
- Fold the cooked spinach and half of the shredded cheese into the egg mixture.
- Pour the mixture evenly into the prepared baking dish.
- Sprinkle the remaining shredded cheese over the top. Add crushed red pepper flakes if using.
- Bake for 30–35 minutes, or until the center is fully set, the frittata is puffed, and the top is deeply golden brown.
