Caprese Garlic Bread Bites

Ingredients
- 1 baguette, sliced into thick rounds
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1½ cups shredded mozzarella cheese
- 2–3 firm tomatoes, sliced
- 1 tsp dried Italian seasoning
- Salt, to taste
- Black pepper, to taste
- Fresh basil leaves
- 2 tbsp balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking tray with parchment paper so the bread does not stick and cleanup is easier.
- Slice the baguette into thick rounds, about ½ to ¾ inch thick. Try to keep the slices similar in size so they toast evenly.
- Arrange the baguette slices in a single layer on the prepared baking tray, leaving a little space between each piece.
- In a small bowl, combine the olive oil and minced garlic. Stir well so the garlic is evenly distributed through the oil.
- Brush the garlic oil generously over the top of each baguette slice. Make sure to cover the surface without soaking the bread too heavily.
- Place the tray in the preheated oven and bake the bread for about 4–5 minutes, or until the edges begin to turn lightly golden and the tops feel slightly crisp.
- Remove the tray from the oven. Sprinkle a generous amount of shredded mozzarella over each toasted bread slice.
- Place one or two tomato slices over the mozzarella, depending on the size of the bread and tomatoes.
- Sprinkle the tops with dried Italian seasoning, a small pinch of salt, and freshly cracked black pepper.
- Return the tray to the oven and bake for another 5–7 minutes. The mozzarella should melt completely and become bubbly, while the tomatoes should soften slightly.
- If you prefer a more golden and lightly browned cheese topping, switch the oven to broil for the final 1–2 minutes. Watch closely because the bread can brown very quickly.
- Remove the tray from the oven and allow the bites to cool for 1–2 minutes.
- Add fresh basil leaves over the top of each Caprese garlic bread bite.
- Drizzle lightly with balsamic glaze just before serving. Avoid adding too much so the bread stays crisp.
- Serve immediately while the bread is warm, the cheese is melted, and the edges are still crunchy.
Tips
Use firm, ripe tomatoes rather than very soft or watery ones. This helps keep the bread from becoming soggy.
If using fresh mozzarella instead of shredded mozzarella, drain it thoroughly and pat it dry with paper towels before adding it to the bread.
For extra cheesy flavor, sprinkle a little grated Parmesan over the mozzarella before baking.
A pinch of red pepper flakes can be added for mild heat.
Do not add the balsamic glaze until just before serving because it can soften the toasted bread if added too early.
For extra crispness, toast both sides of the baguette slices for a few minutes before adding the toppings.
Storage
These Caprese Garlic Bread Bites are best enjoyed fresh and warm.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
For the best texture, reheat them in a 350°F (175°C) oven for about 5–7 minutes or in an air fryer for 3–4 minutes.
Avoid reheating for too long in the microwave, as this can make the bread soft and chewy.
