Baked Aubergine Parmigiana (Melanzane alla Parmigiana)

Ingredients

For the Aubergines

  • 2 large aubergines (eggplants), sliced into ½-inch thick rounds
  • 3–4 tbsp extra-virgin olive oil
  • ½ tsp sea salt
  • ¼ tsp freshly cracked black pepper

For the Layers

  • 2½ cups rich marinara or crushed tomato sauce
  • 200 g (7 oz) mozzarella, shredded or torn into small pieces
  • ½ cup finely grated Parmigiano-Reggiano
  • 2–3 sprigs fresh thyme
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line one or two large baking sheets with parchment paper.
  2. Wash the aubergines and trim off the ends. Slice them into even ½-inch rounds so they cook at roughly the same speed.
  3. Arrange the aubergine slices in a single layer on the prepared baking sheets. Avoid overlapping them, as this can cause them to steam rather than roast.
  4. Brush the tops lightly with olive oil, then turn the slices over and brush the other sides. Season evenly with sea salt and freshly cracked black pepper.
  5. Roast the aubergines for 20–25 minutes, turning them once halfway through cooking. They should become tender, lightly golden, and slightly caramelized around the edges.
  6. While the aubergines are roasting, prepare the tomato sauce if needed. Simmer crushed tomatoes or marinara with a little olive oil, minced garlic, salt, black pepper, and Italian herbs for about 10–15 minutes. The sauce should be rich and slightly thick rather than watery.
  7. If using fresh mozzarella, drain it very well and pat it dry with paper towels. Excess moisture can make the finished parmigiana watery.
  8. Remove the roasted aubergine from the oven, but keep the oven heated to 400°F (200°C).
  9. Spoon a thin layer of tomato sauce over the bottom of a medium baking dish. Spread it evenly to prevent the aubergine from sticking.
  10. Arrange a layer of roasted aubergine slices over the sauce. Slightly overlap the slices if necessary to cover the bottom.
  11. Spoon a layer of tomato sauce over the aubergines. Sprinkle with some mozzarella and a light layer of grated Parmesan.
  12. Repeat the layers of aubergine, tomato sauce, mozzarella, and Parmesan until all the ingredients have been used.
  13. Finish with a final layer of aubergine topped with tomato sauce, mozzarella, Parmesan, and a few fresh thyme leaves.
  14. Place the baking dish in the oven and bake uncovered for 25–30 minutes.
  15. The parmigiana is ready when the tomato sauce is bubbling around the edges and the mozzarella is completely melted with golden-brown spots across the surface.
  16. For a deeper golden finish, switch the oven to broil for the final 1–2 minutes. Watch carefully because the cheese can brown very quickly.
  17. Remove the dish from the oven and allow it to rest for at least 10 minutes before slicing. This resting time helps the sauce settle and keeps the layers together when served.
  18. Garnish with fresh basil leaves and a little extra grated Parmesan just before serving.
  19. Serve warm with crusty bread, garlic bread, or a simple green salad.

Tips

Roasting the aubergine instead of frying it keeps the dish lighter and prevents it from becoming overly oily.

Do not use too much tomato sauce between the layers. A thin coating is enough and helps prevent the finished dish from becoming watery.

Drain fresh mozzarella thoroughly before using it.

For a stronger cheese flavor, add a little extra Parmesan between each layer.

You can add red pepper flakes to the tomato sauce for a mild spicy kick.

Letting the parmigiana rest before slicing is important because freshly baked layers can be very soft.

Storage

Allow leftovers to cool completely before placing them in an airtight container.

Store in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave, or warm the baking dish covered with foil in a 350°F (175°C) oven for about 15–20 minutes.

Baked aubergine parmigiana can also be frozen for up to 2 months. For the best texture, thaw it overnight in the refrigerator before reheating.
