Prep Time: 15 minutes
Cook Time: 50–65 minutes
Servings: 4

Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • ½ teaspoon salt, divided
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • ½ cup pecan halves
  • ⅓ cup dried cranberries
  • 1 tablespoon maple syrup
  • 2 tablespoons chopped fresh parsley

Instructions

Step 1: Prepare the oven and potatoes.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Scrub the sweet potatoes, dry thoroughly, and prick each several times with a fork.

Step 2: Bake the sweet potatoes.
Rub the potatoes with olive oil and sprinkle with half the salt. Place on the baking sheet and bake for 45–60 minutes, depending on their size, until a knife slides easily into the centers.

Step 3: Toast the pecans.
While the potatoes bake, place the pecans in a dry skillet over medium-low heat. Toast for 3–5 minutes, stirring frequently, until fragrant. Remove immediately from the skillet to prevent burning.

Step 4: Prepare the cranberry topping.
If the dried cranberries are firm, soak them in hot water for 5 minutes, then drain thoroughly. Toss with the toasted pecans and maple syrup.

Step 5: Open the potatoes.
Let the baked potatoes cool for about 5 minutes. Cut a deep slit lengthwise into each potato without cutting through the bottom. Gently push the ends toward the center to open them.

Step 6: Season the filling.
Loosen the orange flesh with a fork, keeping the skins intact. Divide the butter among the potatoes and gently mash it into the flesh. Season with the remaining salt and black pepper.

Step 7: Add the toppings.
Divide the feta, cranberries, and pecans evenly among the potatoes. Press the toppings lightly into the fluffy centers.

Step 8: Warm and serve.
Return to the oven for 5 minutes, just until the toppings are warmed. Sprinkle with fresh parsley and serve immediately. The feta will soften but retain some crumbled texture.

Tips

  • Choose similarly sized potatoes so they finish cooking together.
  • Bake until completely tender for a soft, fluffy filling.
  • Use unsweetened dried cranberries if you prefer a less sweet topping.
  • Replace feta with goat cheese for a creamier variation.
  • Add the pecans after the final oven warming if you prefer maximum crunch.
  • Maple syrup is optional; the sweet potatoes and cranberries already provide sweetness.

Storage

Refrigerate cooled leftovers in an airtight container within 2 hours. Enjoy within 3–4 days.

Reheat at 350°F (175°C) for 15–20 minutes, or microwave in short intervals until hot throughout. Add fresh parsley and extra toasted pecans after reheating.

For best texture, freeze the baked sweet potatoes without toppings for up to 3 months. Thaw in the refrigerator, reheat, and add freshly prepared toppings.

Serving Ideas

  • Serve with roasted chicken or turkey.
  • Pair with a green salad for a light lunch.
  • Offer as a colorful side dish for a holiday dinner.
  • Add chickpeas to the filling for a more substantial vegetarian meal.

Recipe Q&A

Can I prepare these ahead?
Yes. Bake the potatoes a day ahead and refrigerate. Reheat until hot, then add the toppings.

Can I use fresh cranberries?
Yes, but cook them first with a little water and maple syrup until softened. They will taste tarter than dried cranberries.

Can I replace the pecans?
Walnuts work well. For a nut-free version, use toasted pumpkin seeds.

Can I leave out the cheese?
Yes. Omit the feta and use olive oil instead of butter for a dairy-free version.

Should I wrap the potatoes in foil?
It is unnecessary. Baking them uncovered helps the skins stay firmer and suitable for holding the filling.
