For the Brie Bites

1 sheet puff pastry, thawed

6 oz (170 g) Brie cheese

1 large peach, thinly sliced or finely diced

6–8 strawberries, thinly sliced or finely diced

2 tbsp honey

1 tbsp brown sugar, optional

1 egg, beaten, for egg wash

1 tbsp fresh basil, finely chopped

Pinch of salt

Freshly ground black pepper, optional

For the Basil Honey Drizzle

⅓ cup honey

1 tbsp fresh basil, very finely chopped

1 tsp fresh lemon juice

Tiny pinch of salt

Instructions

1. Prepare the oven

Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin pan.

2. Cut the pastry

Unroll the puff pastry and cut it into approximately 24 squares, each about 2½–3 inches wide.

Gently press one pastry square into each mini muffin cup, allowing the corners to stick up slightly.

3. Add the Brie

Cut the Brie into small pieces. Place one piece of Brie into the bottom of each pastry cup.

You can leave the rind on—it is edible and becomes deliciously soft when baked.

4. Add the fruit

Top each Brie piece with a small amount of diced or sliced peach and strawberry.

Avoid overfilling the cups because the Brie will melt and the fruit will release some juice.

5. Add honey

Drizzle a tiny amount of honey over each bite. If you like a slightly deeper caramelized flavor, sprinkle a little brown sugar over the fruit.

8. Finish

Remove the Brie bites from the oven and allow them to cool in the pan for about 5 minutes.

Transfer them to a serving platter and drizzle with the basil honey.

Garnish with a few tiny basil leaves and, if desired, a little freshly cracked black pepper.
