Ingredients for Slow cooker cabbage and potatoes
1 medium head green cabbage, cored and cut into large pieces
1½ pounds baby potatoes, halved
1 medium onion, sliced
3 garlic cloves, minced
2 cups chicken or vegetable broth
2 tablespoons butter
1 teaspoon smoked paprika
1 teaspoon dried thyme
½ teaspoon onion powder
½ teaspoon salt, plus more to taste
½ teaspoon black pepper
½ teaspoon red pepper flakes, optional
2 tablespoons chopped fresh parsley
Instructions for Slow cooker cabbage and potatoes
Step 1: Prepare the vegetables
Rinse the baby potatoes and cut them in half. If some potatoes are larger than others, cut them into similar-sized pieces so they cook evenly. You can peel them if you prefer, but leaving the thin skins on adds texture and helps the potatoes hold their shape.
Remove the tough outer leaves from the cabbage. Cut it into quarters, remove the firm core, then chop the cabbage into large pieces. Larger pieces are less likely to become overly soft during the long cooking time. Slice the onion and mince the garlic.
Step 2: Layer the potatoes and onion
Place the halved potatoes in the bottom of a 5- to 6-quart slow cooker. Arrange the sliced onion over the potatoes. The potatoes need more direct heat and take longer to cook than the cabbage, so putting them at the bottom helps them become tender.
Spread the vegetables into an even layer. Try to keep the potato pieces mostly cut-side down where possible, though they do not need to be arranged perfectly.
Step 3: Add the cabbage and garlic
Place the chopped cabbage over the potatoes and onion. Add the minced garlic across the top. The cabbage will look like it fills the slow cooker, but it will shrink as it cooks. Avoid pressing it down too firmly; leave enough room for the heat and broth to circulate.
If your slow cooker is smaller, add the cabbage in a few batches as it begins to soften. Keep the lid closed so the cooker maintains its temperature.
Step 4: Season the vegetables
In a small bowl, combine the smoked paprika, dried thyme, onion powder, salt, black pepper, and optional red pepper flakes. Sprinkle the seasoning mixture evenly over the cabbage and potatoes. If you like a milder dish, leave out the red pepper flakes. For more heat, add a pinch extra.
Pour the broth around the vegetables, aiming for the sides of the slow cooker rather than washing all the seasoning off the cabbage. Add the butter in small pieces over the top. As it melts, it will add richness to the broth and vegetables.
Step 5: Cover and cook
Place the lid on the slow cooker. Cook on LOW for 5–6 hours or on HIGH for 2½–3½ hours. Cooking times vary by slow cooker, the size of the vegetable pieces, and how full the cooker is.
The dish is ready when the potatoes are easily pierced with a fork and the cabbage is tender. Start checking near the earlier end of the cooking range. If the potatoes are still firm, replace the lid and continue cooking in 20- to 30-minute increments.
Step 6: Stir gently if needed
If you are available, carefully stir the vegetables once about halfway through cooking. Use a large spoon and lift from the bottom so the potatoes do not break apart. This helps distribute the broth and seasonings.
Stirring is optional. If you are away from home, leave the lid on and let the slow cooker do its work. Each time the lid is removed, heat escapes and the cooking time may increase.
Step 7: Taste and finish
Once the potatoes are tender, taste the broth and vegetables. Add more salt or black pepper if needed. If the flavor seems mild, a little extra smoked paprika or thyme can help; add small amounts at a time so the seasonings do not overpower the cabbage.
Let the dish rest for about 5 minutes with the slow cooker turned off. Sprinkle chopped fresh parsley over the top. Serve the cabbage and potatoes warm, spooning some of the flavorful cooking liquid over each portion.

Tips for Slow cooker cabbage and potatoes
Cut the potatoes evenly. Similar-sized pieces cook at roughly the same rate. If using large potatoes instead of baby potatoes, cut them into chunks about 1½ inches wide.
Keep the cabbage in large pieces. Thinly sliced cabbage can become very soft over several hours. Larger pieces stay more distinct and are easier to serve.
Put the potatoes on the bottom. They take longer to cook than cabbage, so placing them closest to the heat helps them become fork-tender.
Use the broth that suits your meal. Chicken broth gives the dish a savory flavor, while vegetable broth makes it suitable for a vegetarian meal. Choose low-sodium broth if you want more control over the salt.
Adjust the spice level. Red pepper flakes add a gentle kick but are optional. You can also use a small pinch of cayenne pepper, or omit spicy seasonings for a milder dish.
Don’t add extra liquid automatically. Cabbage releases moisture as it cooks, so the vegetables will soften in the broth without being completely submerged. Adding too much broth can make the finished dish soupy.
Check doneness with a fork. Cooking times differ among slow cookers. Test the largest potato piece; it should be tender all the way through.
Stir with care. Cooked potatoes can break apart easily. Use a broad spoon and gently lift the vegetables rather than vigorously mixing them.
For a richer finish, add a small pat of butter just before serving. This is optional, but it gives the cooking liquid a more buttery flavor.
Add parsley at the end. Fresh parsley tastes brightest when sprinkled on after cooking rather than cooked for several hours.
Make it a full meal. Serve with crusty bread, cornbread, roasted chicken, smoked sausage, or a simple green salad.
Storage Slow cooker cabbage and potatoes
Let leftovers cool, then transfer them to an airtight container and refrigerate within 2 hours of cooking. Store in the refrigerator for up to 3–4 days. Keep some of the cooking liquid with the vegetables so they stay moist when reheated.
To reheat, warm individual portions in the microwave, stirring gently halfway through. For a larger amount, place the leftovers in a covered saucepan over medium-low heat and stir occasionally until steaming hot. Add a splash of broth if the vegetables seem dry. Reheat only the portion you plan to serve.
You can freeze leftovers in a freezer-safe container for up to 2 months, although the cabbage and potatoes may soften after thawing. Thaw overnight in the refrigerator and reheat gently. For the best texture, enjoy the dish fresh or refrigerated rather than frozen.
