Ingredients

  • 2 medium beetroots, cooked, peeled, and diced
  • 2 large cucumbers, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Optional Additions

  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1 avocado, diced
  • 1/2 cup chickpeas
  • A pinch of red pepper flakes

Instructions

  1. If using fresh beetroots, wash them well and place them in a pot of water. Bring to a boil and cook for about 30–40 minutes, or until they are tender when pierced with a fork.
  2. Drain the cooked beets and allow them to cool completely.
  3. Peel the cooled beetroots and cut them into small bite-size cubes.
  4. Wash the cucumbers and chop them into similar-size pieces. If the cucumbers have very thick skin, peel them partially or completely.
  5. Thinly slice the red onion. For a milder onion flavour, soak the slices in cold water for 5–10 minutes, then drain.
  6. Add the beetroot, cucumber, red onion, parsley, and dill to a large mixing bowl.
  7. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, salt, black pepper, and garlic powder.
  8. Pour the dressing over the salad.
  9. Gently toss everything together until the vegetables are evenly coated. Be careful not to mix too aggressively because the beetroot will naturally colour the cucumber.
  10. If using feta cheese, walnuts, avocado, or chickpeas, gently fold them in after the salad has been dressed.
  11. Cover the bowl and refrigerate for about 20 minutes before serving. This gives the flavours time to blend.
