Creamy Cucumber Tomato Onion Salad with Dill

Ingredients
- 2 large cucumbers, thinly sliced
- 3 medium ripe tomatoes, cut into wedges or slices
- 1 small sweet or yellow onion, thinly sliced
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon white vinegar
- 1 teaspoon Dijon mustard
- 1 small garlic clove, finely minced
- 2 tablespoons fresh dill, finely chopped
- ½ teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- ½ teaspoon sugar, optional
Instructions
- Prepare the vegetables: Rinse and thoroughly dry the cucumbers and tomatoes. Slice the cucumbers into thin, even rounds. Cut the tomatoes into wedges or rounds and thinly slice the onion.
- Dry the cucumbers: Arrange the cucumber slices on paper towels and gently pat them dry. Removing excess moisture helps keep the creamy dressing thick and prevents the salad from becoming watery.
- Prepare the creamy dill dressing: In a large mixing bowl, whisk together the sour cream, mayonnaise, lemon juice, white vinegar, Dijon mustard, garlic, fresh dill, salt, black pepper, and sugar if using. Mix until smooth and evenly combined.
- Add the vegetables: Place the cucumber slices, tomatoes, and onion into the bowl with the dressing. Gently fold everything together until the vegetables are evenly coated. Toss carefully to avoid crushing or breaking the tomatoes.
- Chill the salad: Cover and refrigerate for 15–30 minutes if time allows. Chilling gives the flavors a chance to blend and makes the salad especially refreshing.
- Serve: Just before serving, gently toss the salad once more. Finish with a little extra chopped dill and freshly cracked black pepper. Serve chilled.
Tips
For especially crisp cucumbers, sprinkle the slices lightly with salt and let them rest for 10–15 minutes. Pat them thoroughly dry before combining them with the dressing.
For a lighter version, replace part or all of the sour cream with plain Greek yogurt. It adds a pleasant tang while keeping the dressing creamy.
If the tomatoes are particularly juicy, remove some of the seeds and excess liquid before adding them to the salad. This will help the dressing stay thick.
For a milder onion flavor, soak the sliced onion in cold water for about 10 minutes, then drain and pat dry before adding it to the salad.
Storage
Transfer leftovers to an airtight container and refrigerate for up to 2 days. For the freshest texture and creamiest dressing, enjoy the salad on the day it is prepared.
Cucumbers and tomatoes naturally release moisture as they sit, so some liquid may collect in the container. Gently stir the salad before serving leftovers.
