Ingredients
For the Beef Roast
- 3–4 lbs beef chuck roast
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
For the Onions and Garlic
- 3 large yellow onions, sliced
- 8–10 whole garlic cloves, peeled
- 2 tablespoons unsalted butter
- 1 tablespoon brown sugar, optional
- 1 tablespoon Worcestershire sauce
For the Rich Brown Gravy
- 1½ cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon tomato paste
- 1 teaspoon Dijon mustard
- 1 teaspoon dried Italian seasoning
- 2 tablespoons cornstarch
- 2 tablespoons cold water
For Garnishing
- 1 tablespoon chopped fresh parsley
- ½ teaspoon freshly cracked black pepper, or to taste
Instructions
Step 1: Season the Beef
Pat the chuck roast thoroughly dry with paper towels. Combine the salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary in a small bowl. Rub the mixture evenly over every side of the roast.
Step 2: Sear the Roast
Heat the olive oil and 1 tablespoon of the beef-roast butter in a large skillet over medium-high heat. Sear the beef for 3–4 minutes per side, until a deep brown crust forms. Transfer to a plate.
Step 3: Brown the Onions
Reduce the heat to medium and add the 2 tablespoons butter listed for the onions. Stir in the sliced onions and cook for 15–20 minutes, stirring regularly, until softened and golden. For deeper caramelization, continue cooking over medium-low heat until richly browned.
Add the whole garlic cloves, optional brown sugar, and 1 tablespoon Worcestershire sauce. Cook for another 2 minutes, stirring gently.
Step 4: Layer the Slow Cooker
Spread half the onion and garlic mixture across the bottom of a 6-quart slow cooker. Place the seared roast on top, then spoon the remaining onions and garlic around and over the beef.
Step 5: Mix the Gravy Base
Whisk together the beef broth, remaining 2 tablespoons Worcestershire sauce, soy sauce, balsamic vinegar, tomato paste, Dijon mustard, and Italian seasoning.
Pour a little of this mixture into the warm skillet and scrape up the browned bits. Add it to the slow cooker along with the remaining gravy mixture.
Step 6: Slow Cook Until Tender
Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours. The roast is ready when a fork slides in easily and the meat pulls apart with little resistance. If it is still firm, continue cooking until tender.
Keep the lid closed as much as possible to maintain a steady cooking temperature.
Step 7: Rest the Beef and Thicken the Gravy
Carefully transfer the roast to a serving platter and cover loosely with foil. Let it rest while you finish the gravy.
Skim excess fat from the cooking liquid if needed. Mix the cornstarch with the cold water until completely smooth, then stir into the liquid in the slow cooker.
Cover and cook on HIGH for 15–20 minutes, or until thickened. If the gravy remains thin, transfer it to a saucepan and simmer gently, stirring, until it reaches your preferred consistency.
Step 8: Finish with Butter
Stir the remaining 2 tablespoons of beef-roast butter into the hot gravy until melted. Taste and adjust the seasoning as needed.
Step 9: Add the Beef Back
Return the rested roast to the slow cooker, either whole or separated into large pieces. Spoon the gravy, softened garlic cloves, and onions over the beef.
Step 10: Garnish and Serve
Sprinkle with fresh parsley and cracked black pepper. Serve warm with mashed potatoes, roasted vegetables, buttered noodles, or steamed rice.
Tips
- Choose a well-marbled chuck roast for tender meat and a rich gravy.
- Dry the beef before searing so it browns evenly.
- Allow extra time for the onions if you want a deeply caramelized flavor.
- Use reduced-sodium broth and soy sauce for more control over the seasoning.
- Cook on LOW when possible, and judge doneness by tenderness.
- Avoid adding extra broth at the start; the onions and beef release liquid as they cook.
- For a smoother gravy, strain out the onions and garlic before thickening, then return them before serving.
Storage
Refrigerate the beef and gravy together in an airtight container for up to 3–4 days. Divide large amounts into shallow containers and refrigerate within 2 hours of cooking.
Reheat gently in a covered saucepan or baking dish until hot throughout, adding a splash of broth if the gravy is too thick.
Freeze cooled portions with gravy for up to 3 months. Thaw overnight in the refrigerator before reheating.
