Ingredients
For the meatloaf:
- 2 pounds ground beef
- 8 slices bacon, cooked and chopped
- 1 cup shredded cheddar cheese
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 large eggs
- ¾ cup breadcrumbs
- ½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For the topping:
- 1½ cups shredded cheddar cheese
- 5–6 slices bacon, cooked until crisp and chopped
- 2 tablespoons ketchup or barbecue sauce, optional
Instructions
Step 1: Prepare the Oven
Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly grease a large loaf pan.
Step 2: Soak the Breadcrumbs
Combine the breadcrumbs and milk in a large bowl. Let stand for 5 minutes.
Step 3: Mix the Meatloaf
Add ground beef, bacon, cheddar, onion, garlic, eggs, ketchup, Worcestershire sauce, mustard, and seasonings. Mix gently until just combined.
Step 4: Shape and Bake
Shape into a loaf approximately 9 inches long and 5 inches wide on the baking sheet, or place in the loaf pan. Bake uncovered for 45–50 minutes.
Step 5: Add the Topping
Carefully spoon off excess pooled grease. Spread ketchup or barbecue sauce over the loaf, if using, then sprinkle with cheddar and crispy bacon.
Step 6: Finish Baking
Bake for another 10–15 minutes, until the cheese melts and the center reaches 160°F (71°C). If needed, continue baking until it reaches that temperature.
Step 7: Rest and Serve
Let the meatloaf rest for 10 minutes before slicing and serving.
